I am in a minority on the shroomery, as I frequently defend the opposing side when they have a point about something or when my side make believes something about them.  I also attack my side if I think they're wrong.  People here get very confused by that and think it means I prefer the other side.

I know very little, but killing the bacteria is pasteurization. I think homogenizing the milk makes it a uniform consistency, so cream doesn't rise to the top.

I make them sunny side up all the time, but I get my eggs direct from my sister's chickens, and not to brag but I'm really good at making eggs. I don't like the whites runny, and most people that make sunny side up haven't figured out how to cook them without runny whites. The trick is to use an aluminum pan, start it off kind of cool, but crank the heat once the egg is cracked. The yellows having greater mass concentration cook slightly slower than the thinner whites, so as the pan heats you can cook the whites through without overcooking the yellow.

Otherwise I like them over easy.

Or...Use a very hot cast iron skillet and flip the hot bacon grease in which you're cooking the eggs onto the top of the whites with your spatula, thus cooking the slime off of it.

Everything tastes better cooked in bacon grease.

I make my own bacon and the truth is it produces probably like 30% the grease of store bought bacon, it makes it considerably harder to cook in. So I end up adding some vegetable oil to my pan. I do have a nice collection of well seasoned cast iron pans that I absolutely love, but I've migrated to this one really nice aluminum pan for my breakfast making in the last year or so. I've been trying to convince my wife that we need an outdoor kitchen, mostly so I can get a gas griddle.
