How I’ve been pasteurizing lately. Stove set to 160, pot with three 5lb bags filled with water and pot lid to hold them down, metal wire and probe thermostat with alarm set to 160. When it goes off I turn the timer to 1 hr. Then take it off and let it sit just how it is till the next day. Usually even by the next day it’s still around 120-140. Hasn’t failed me yet.
