http://www.livescience.com/41492-mushrooms-make-wind.html
Mushrooms create air flow by allowing their moisture to evaporate. "A mushroom is essentially doing less than nothing to protect its water from evaporating off," Roper told LiveScience.
This evaporation allows them to cool off, as the phase change from liquid water to vapor uses up heat energy. Cold air is more dense than warm air, and has a tendency to flow and spread out, he added. The evaporation also creates water vapor, which is less dense than air. The two forces help carry spores out of the mushroom, and give them a little lift, he said. The lift can carry spores up to 4 inches (10 centimeters) horizontally and vertically, he said.
Mushrooms often live on the forest floor, under logs or in very tight quarters where wind wouldn't be expected to reach, Roper said. The ability to "create wind" helps give spores a better chance at finding a new, moist location to land and begin growing, he added.

I proposed this as a reason for spores being on top of mushrooms maybe a year ago and pussyfart insisted it was due to air currents from holes in the tub, which is true.
But i used to grow in bags with no holes and the top mushroom would still have spores on its cap.
Mushrooms create their own wind via a change in humidity levels before and after caps open. It's slight but it happens and it's enough to lift spores up and away from the cap. I also think heat created inside the bags or tubs rises upward, which also carries spores up.

I would think they would create their own heat while growing as well to help aid with the evaporation process.

One tray is almost at 100%, not sure if I should wait the full ten days or fruit when ready. I have several jars at full colonization but no grain for my mycobags, would storing in a refrigerator be a safe place for a jar, would it slow if not halt growth?
