My two Shiitake bags spawned on 11/27 are growing like crazy. I have a really good feeling about them and am starting the next round later today

Then I have these Lion's Mane bags spawned 12/8. I think they are ready to be put into fruiting conditions in about a week. Thoughts?

Nice! The lion's mane bags are probably colonized. Take a close look - do you see thin mycelium all around? It doesn't tend to get very thick before it's ready to fruit. (There are others here with more LM experience who can hopefully offer a second opinion.)

No i agree lions mane stays thin in substrate I usually base mine on time rather then appearance

That lions mane looks ready to fruit. As others have said, it stays very thin and whispy on the substrate. As long as it’s fully colonized I would fruit it.

Ok then, thanks everyone! I'll go ahead and put them into fruiting. Is it best to cut off the top of the bag, seal it up, and then cut some slits to fruit it out the side? The first time, I top-fruited the bag, but they grew out weird.

My first chestnut grow. Spawned on 10/29. Should I fruit it with high co2 in 50f? Or low co2, 80f?

50°-60° high C02 until good pinset.
once pins form, lower  CO2 levels. Increase fresh air exchange (FAE) to prevent leggy or elongated stems.
80° is too hot
