Beer Agar * 2

I decided to play with different agar recipes and made a beer agar with alcohol free wheat beer.
I mixed 10% beer with 90% water; thats it. No sediments just clear agar.
This way a 0.5L bottle is enough for 5L agar, so I made ice cubes with the rest of the bottle.
This is a 10 days old GT plate with beer agar:


Nothing big, but wanted you to know:thumbup:

Well, I have to admit this is pretty clever. It has malt and yeast proteins. Basically MEA ingredients. Wonder if the concentrations are close enough. Also wonder if alcoholic beer is in any way detrimental. I suspect some alcohol will boil out during initial preparation step and most of the rest will go away in the PC.

I can't imagine that it would make it through the PC.

"A group of researchers in 1992 at the U.S. Department of Agriculture, the University of Idaho, and Washington State University decided to find out.  In the end, what they discovered was that the “alcohol cooks out” assumption didn’t turn out to be correct for the vast majority of ways most people prepare food with alcohol.  In their study, they used a variety of recipes with various sources of alcohol and a variety of preparation types, including simmering, baking, flaming, refrigerating over night, etc.  What they found was that the amount of alcohol remaining after cooking was in the range of 4%-85%.  The variations weren’t just dependant on how long you kept the temperature above alcohol’s boiling point either.  They also found that the other ingredients made a difference in the alcohol retention rate.  The size of the cooking vessel also greatly affected the alcohol retention rates.  The smaller the vessel, the more alcohol will be retained given some set cooking time, due to the smaller surface area for evaporation."

Any beer that's not too hoppy will make a good agar. Hop acids are naturally antibacterial but also hard on fungi and yeast though not outright lethal. Almost all the ethanol will be gone during preparing it and sterilizing.

Brewers actually use wort for their agar. It helps them find the best genetics for the particular beer they are making.

Breweries buy commercial strains. Ive seen one brewery ever try to isolate their own strain ever in my career commerical brewing. The strain sucked ass and made a horribly phenolic beer that had to be called a saison. I use wort to make agar because its dirt cheap compared to anything from a science retailer.
Maybe miller and bush work on making strains. Maybe someone big like new Belgium or Sierra Nevada does but these days that stuff is handled by yeast biologists that identify specific gene function and fermentation performance etc ..

I'm totally trying this. Still relatively cheap as balls and makes things even easier than it already is. Eliminates the pesky step of having to mix one thing with another thing.

Wait what? Their own strain of ... yeast? All I know about worts is that they're scoby's but for beer?

I saw a documentary that talked briefly about finding new yeasts to help beer, and the scientists were all stupid excited to be like "OMG we have this new locally sourced yeast from bees in your area. Do you want it brewers?!" The brewers were like "YES!" Then they brewed the beer and were like "These results could have... been better." :laugh2:

Anyways, not sure what strains you're talking about as I'm not familiar enough with beer.

Pretty much all brewing yeast comes from culture libraries at one of these three BSG, Wyeast, or white labs. There's places like omega yeast they just grow the same commercial strains and rename them. Maybe they have a couple proprietary strains. I would buy Homebrew sized vials of yeast. Streak them to petri dishes. The. Re grow them sans contamination up to 100 gal size to pitch 3-6K gal batches of beer. Buying 100gal of yeast with overnight shipping is thousands of dollars. Growing it up yourself far cheaper. Those Homebrew vials often ain't exactly axenic either even tho they're made by reputable companies.

Awesome! Thanks. Actually, I'd been considering cultivating/growing yeast for some fun projects (i.e. beer, bread, food). Does this same principal hold for "nutritional" yeast?

What would be a good beer to go with on this. Not much of a beer head myself. Stout better than something light or the other way around? Obviously cost is something to consider. I also have access to essentially free beer which is a darker ale.

OP used a wheat beer so go with that. bod said nothing hoppy so no ipas n shit.

Nobody said anything about developing own strains. You just get a slant of whichever strain you decided to use, transfer it to agar made with specific wort, select the most vigorous growth and then multiply that to quantities big enough for inoculation.

This person was talking about developing strains. You don't find good genetics of something that's already a single strain isolate.
