Yeah it depends on your perspective on the matter

Both.

So if I cut off my leg and handed it to you, would say "That is learningtofly" or would you say "that is part of learningtofly"

If you say the former, you are neglecting to include the rest of my body and therefore I believe it is false to say that my leg IS me

Its not false if you also include the person your handing the leg to as also being yourself.

Really it doesn't matter either way, this is off topic.

I simply mean, the number of souls is not limited by the people on the earth and not limited by their point of death.

Souls should be, by definition, universal, so they fit into every being, plant, animal, stone. And if the question is 'how many angels can rest on a needle's tip', then how many souls can be there, born or unborn in earth's space ?
Nevermind, after death, if something survives, it has different dependencies on space and time, than our physical body and our mortal mind, in regards to that what we generally understand as 'soul'.

This is a good example.

If we could you destroy all your body parts save for the brain and kept it alive somehow via some science fiction marvel, would that still be you?

Are you the brain and the rest is just your toolbox?

No you are you the brain is not you the brain is a tool, the mind is a tool. A carpenter is not his hammer and it would be silly for him to think he is, similarly to the hammer the mind and brain are tools.

no. the brain would be part of me, but it is not all that is me. to say that "my brain is me" is to say that "the rest of my body is not me"

me is the whole, all of my body parts together is me.

It's like a puzzle, if you have a big ol' puzzle and you take out one piece, would you consider that the the puzzle or just a puzzle piece?

So, if you spit, that spit was once you and once it leaves your mouth it is no longer a part of you?

You used your fingers to type that message, no differently than how you would use a hammer to hit a nail.

The body is obviously an instrument which you manipulate, so you cannot be the body.
