Grain for the first time, did he use too much????

My friend just tried rye grain for the first time. He has noticed that all the pros and bigtymers such as Anno, MushMush, etc. recommend a 1 to 1 ratio. He measured out the volume of his quart jars and found that 1 cup wasn't too much, so he used 2 cups of rye grain to 2 cups of water. Does anyone think that he used too much?!?! Thanks!!!!!

Me? No. Read www.fungifun.org/grain .

I recomend using a near 1 to 1 ratio by WEIGHT not by volume....

By volume it?s much to wet for me....

Oh, well maybe that's where he went wrong, but anyways, he just took them out of the pc and the grains are all swollen up real huge, but it doesn't look like any of them exploded. Only problem is, they expanded so much that theirs hardly any room in the top of the jar to shake, so I imagine these are pretty much useless. And if I used 1 to 1 by volume and not weight, then I'm sure they're useless. Ahhhh, trial and error, the best teacher!!!!

The jar shouldn?t be more than 1/3rd full when the grain is still raw.....

isnt this the whole point of boiling the grains first.. where they not only expand to their 'wet size' and take in the 'perfect' amount of water after being strained.

Isn't that the correct way to do grain jars? (of course, once you get used to it, and really know the right amount for your specific grain, you may skip steps)

There are 2 aproaches to grain preparation:

-puting measured amounts of grain and water in a jar(the exact amounts have to be determined by trial and error) fited with a lid and pressure cooking.

- simmering the grain first for around 45 minutes(the exact time has to be determined by trial and error), then filling it into jars and pressure cooking.

I prefer the first way becasue it?s faster, but many growers prefer the socond method.

This is why most only use 1 cup of grain in Quart jars.

I also prefer the first method Anno, the latter seems like to much of a pain in the arse!! One last question, is it possible to shake the jars too hard, causing exploded kernels or anything?? Thanks!!!

Nah, it's easy.  Grab the amount of grain you want, throw it in a pot to simmer.  Wait 45 minutes, let strain, then pack your jars.  Perfect moisture levels every time, and the grain doesn't expand during PC'ing because that part is already done!  :wink:

If thre aren?t many exploded kernels, you can take the grain out of the jars, fill each jar 2/3rd full, and sterilize again for 45 minutes. THis should give you usable jars without waisting the rye.

If there are exploded kernels, wash the rye first and let it drain well.
