Shake the hell out of them jars while they are still hot
It will distribute the wet/dry grains evenly and make them all about the same

rye grain just looks dry sometimes. it has that silky grayish color that makes it appear hard and not hydrated..if you shake the jars and listen to what it sounds like you can tell if it's dry.if it's dry it'll sound like hard grains going tink tink on the metal lid,and if it's moist than it should sound like a thud thud.

Each grain(doesn't matter which)can only absorb so much water.

How do you know that you are adding the amount that each grain can hold?You don't,well,unless you have studied the water absorbing capabilities of said grain.Still each grain is different.

Simmering lets each grain absorb as much as it can in the time it is simmering therefore insuring almost a perfect water content everytime.

Adding water is guessing!

Not needed to simmer but it adds the water to the grain way better. You do not want the grain to explode.

A fairly decent grain tek/

To avoid these questions, I always precook my grain. I have found much better results doing this.

the first time i used rye i thought it looked dry also.i soaked it for 24 hours and pc'ed at 15 psi.thats just how it looked for me.you could have a different situation but if you soak it 24 hours you'll be A OK.

a little tip don't let the grain burst a friend of mine tried adding water to the jars and pcing it.tring to hydrate and sterlize all in one step resulted in bursting the grain badly.when i semmer mine i have a few burst but not to many to have that kind of a mess.

I've only done millet so far but I don't soak or simmer as I've said...I played with the ratio till I found the right one (350ml millet/200ml water per 1lt jar) for millet its easy to find the right ratio you just keep bringing the water content down till theres no mush (or at least very very little) at the bottom...also make sure from now on to shake when hot..a lil tip I found with millet is to wait 10mins after all pressure it outta the pc before shaking...if you shake right when the pressure drops you get clumps of millet that never seem to wanna break...but for some reason if you wait 10mins before shaking it shakes up perfectly with no clumping and it seems easier to shake it as well
