this is what i did at a store and i was able to profit around $3500...

find a store with a garden area with a low fence, check out the expensive items in the store, look them up online to see how much you can sell them for, and start buying cheap little things so that they get used to you as a customer.  read name tags and try to figure out when management isn't there.  clear out an area on a shelf in an aisle, take one of the expensive items and put it in that space, open it up, take out the metal detector stripes, remember where they are at for that item, repeat with other items but just cut with a razor blade where they are at and take them out, then take all the items you can carry out into the garden area and toss over the fence.  buy something cheap, walk out, go collect your goods, sell on ebay/amazon.

I don't feel bad about it though because I usually support the artist by getting the album on vinyl if I like it when I download it

Vinyl can be just so pricey sometimes though
