Thank you, two hours of sterilisation is enough? Should I keep an eye on the water level during sterilisation?

That I'm not actually sure on. I've never done the steaming method. You would have to look in the original tek.  Follow  Whatever the tek says and you'll be good.

I used to steam sterilize for 2 and a half hours but even a small percentage of things would contam

I would steam sterilize for 3 hours to be safe, you may need to refill the water at some point if it gets low

I’m going to make some PF Tek jars, but I have a few questions:

Will I be able to sterilise my jars properly using this pot?

As I’m in Europe, I don’t have access to canning jars, so I don’t have any lids to place at the bottom of the pot – can I use a tea towel instead?

With this pot, should I sterilise for at least 2 hours? How long can I keep a sterilised jar before filling it, given that I won’t be able to sterilise everything?

How much water should I use with this pot, bearing in mind that with the tea towel, I won’t be able to sterilise as many jars as shown in the photo?

You can use a regular pot, but...

You should put something on the bottom so the jars don't have direct contact with the base.

I've never used a rag, and honestly, I'm not crazy about the idea. Try using something metal — ideally a trivet or rack, but if you don't have one, improvise or make a wire rack.

I'd also recommend covering the jar lids with aluminum foil so too much moisture doesn't get inside the jars.

90 minutes from the moment steam starts coming out will be enough.

And I'd add two more holes to the lid to make it 4 in total.

Good luck!

I think a rag folded over once or twice will do if they dont have a rack of some sort. Extra jar lids work well too

It'll work but soak the rag first.  It has a tendency to bubble up IME.

You don't want a towel or whatever, as steam bubbles will probably not (all) pass through. Crumpled up chicken wire or whatever will probably work better. Happen to have one of these lying around? I used this before getting a PC.

And as a fellow European, I found my PC in a toko / Asian food store. Still going strong, 14 years later. You just have to look for it.

When I don't have jar lids/trivets that will fit I roll aluminum foil into little snakes. and lay a few rings or straight strips on the bottom. Does what a trivet does, small footprint and wicks heat extremely well which is what you want.

jar lids or just the Rings work really well too. Place those then a little piece of tin foil on top of them if you feel like it but not necessary

Oh yeah a double boiler is a great idea. that's exactly what it's intended for. And you don't even need to trivet.

And adding more water as it starts to get low is super simple.

You can pour water straight in without having to worry about going around the jars

not that that's an issue really.

That thing will not work.

First of all, that thing will be destroyed by direct heat, especially with uneven pressure.

Second of all, looks like an induction stove which works with electrical currents in the pot (in laymans terms) so it may not even heat that ceramic, it would have to go in the oven, and idk if you've ever tried to poil water in the oven, but i wouldnt lol.

Furthermore you want to steam them, not boil them. You dont really want them submerged.

The dutch oven? That's like 3/8ths of cast iron, the house could burn down around it and it'd be fine.

And it looks like an electric coil stove, rather than induction. Slow to react / hard to heat accurately, but not induction.

I use one of these...

I have no idea what its called

It came with the vegetable/seafood steamer[22L] I bought from my local grocery store

And the guy named DaltonGrows from youtube says to just crumple up some aluminum foil and put it under the thing to elevate it

Works like a charm

Have you guys ever had bad experiences with different brands of agar from Amazon?  I never had problems with the Telephone brand, now I don't live close to an Asian market.  I cannot get this shit to blend like it's supposed to.  I heat the water, mix it in slowly, then kill the heat as it started boiling.  I whisk the hell out of it.  500ml water, 10g agar agar powder. PC for 15min, pour into dishes while it's still real warm.  Am I doing something wrong?  The dishes stay watery after pouring/cooling, and I have thick shit left sitting at the bottom of my agar bottle after pouring plates.  It's happened three times now with 3 different agar recipes.

Agars ability to gel will be impeded by an acidic pH. Is it possible your water is acidic?

This happened to me to using this agar (below) from amazon. I made LME plates and they stayed watery until they dried like the agar never held onto the water.
would be interested to see what everyone else is using that has on point agar game.
