What PSI are you running? 4 quarts had maybe 200ml left after 1 hour 20 minutes going in between 15-16 PSI in a 24 quart pressure cooker for me.

17 psi in my Presto, 15 psi in my T-Fal. If you’re using that much water during your PC run you’re running it a little hot. You don’t want a loud, spitting, hissing, rocking weight or relief valve. Dial back the heat just a little bit and maintain pressure without losing all that steam.

Definitely, but also: I've figured out what that sweet spot is on my stove, and just set it there from the beginning. Your vessels and grains need time to come up to temperature, they're not gonna instantaneously hit the target temp just because the steam is hot enough. If you crank it up and make the water boil before the grain's had a chance to get hot, then you're just wasting steam.

I did not have good luck with bags when I tried them, perhaps I'll give it a shot again someday. But the limitations of my SAB really got in the way. I can run 20 quarts in two side-by-side Prestos on the stove, all my containers are reusable and cost me nothing, and I can do large volumes while still growing out a variety of different cultures.

i think it could
work with a big enough jar if you only fill
halfway.  it could bubble up and get the filter wet and ruin it.  othet than that i dont see why it wouldnt work but it might actuallly let too much gass out.

this is a kloakk question.

Well, for a sourdough starter a SFD would probably be fine, but if I got it right he is doing cider? One thing is that with almost any fermenting beverage it produces a lot of CO2 and I'm not sure a SFD would let enough gas out and the pressure would build, guess the filter pops before the jar, but as DV8 said, it's a two way GE and you don't want oxygen in, it would ruin it quickly.

So either a blow off tube or airlock is needed.

Doesn't altitude affect pressure cooking? I was reading water boils at lower temperature are you really high up? Im at sea level so 15-16 PSI is really hot. I should probably be doing about 10 PSI I was reading an electronic presure cooker that does 15PSI at high altitude and 10PSI at my altitude.

I guess im just going to have to find what works best in this location.

No, the 15.psi is recommended minimum AT SEA LEVEL

its all about the temperature and time... increasing psi lowers the amount of time needed to kill the microorganisms to an acceptable log

Shoot I think the instapot only does about 10PSI on high setting. I thought it might be good because I don't have to watch it. Im not sure how I used so much water and it almost ran out but I think I can get away with the instapot method I know lots of people have used them with success.

It may work, but very limited. IP is more suited for Liquids and agar  than for grains.

The tepache recipe just said to cover the jars with cheesecloth so thats what I  did. Should be fine for a day while I get stuff together for a makeshift airlock

I'm not at any relevant altitude but I have magnets on the PC weight so it doesn't hiss and wobble all the time, with the added weight it's quiet but also a couple of PSI higher.

Aha, yeah, tepatche doesn't seem to have anything that will oxidize to quickly and it says to drink within a week so should be fine as you say. If you are using jars you could just use a lid and back it off a little just like when you run them in the PC. I still think keeping oxygen out will serve you, but I've never made tepatche :muppet:

Are you planning on letting it carbonate? I saw someone put it in bottles and letting it carbonate while others are just putting it in a pitcher.

Hi, I want to switch from micropore tape to Tyvek as a jar filters, I don't have access to USPS. I want to just cut the Tyvek suit into smaller pieces.

I have a choice between Tyvek 200 and Tyvek 500 suits. Should I choose the 500 version as the better one? The price is the same.
From what I can see, both have a lower g/m² than USPS's Tyvek but a much better barrier against particles, etc.

Using Tyvek 200 or 500 should be fine? Just buy Tyvek 500 and go for it? Does anyone else use suits these days?

Problem is all my standard jar lids are in use. This batch is actual apple so I dont wanna fuck it up, but I plan on drinking it on new years and I dont know all the storage details

Here’s a question for those that make gummies. If I make gummies and want to store them in portions of like 8 pieces, what kind of mini Mylar like bags do I buy? I’d like to store them in like vacuum seal pouches with a ziploc to reseal, similar to the ones the Road Trip mushroom gummies or small portions of THC gummies come in. The ones that you tear off the top and it has a ziplock to reseal it.

I see, again, never made tepatche so I'm just answering based on what I know from brewing beer. But from what little I've read about tepatche it seems that as time goes beyond 1 week it will start to turn into vinegar, seems 2 weeks is not that bad, but that will probably depend on how big the Acetobacter population is :uhoh:

If you want shelf life then it should be boiled for 15 minutes, use a clean ale yeast, use airlock, let it ferment, add to bottles, add sugar for carbonation and store cold when the fermentation is done.

With the batch you are doing now, you could put it to bottles and pasteurized in a water bath when it's done fermenting.

Instapots work more than fine. They get up to 12psi.

Of all my failures, it has not been from the instapot.  And the one I use, the silicone mats for my jars have them sit in water

Just run it for 185 minutes

Make sure you do the 10 minute bleed before you close the valve.

It was actually really good at 2 weeks. At 3 it was def turning into vinegar. Week 4 or 5 I ended up making a strawberry yogurt vinaigrette with it :homerdrool:

In my situation would you boil them tn before airlocking? All I have is brewers yeast that i already added, but I did see someone suggesting boiling a little yeast to feed it so it probably wouldn't hurt I guess?

Have you heard?

A Date Which Will Live in Mycelial History
Mr. Moderator, Mr. Admin, Members of the Shroomery:
Today, December 15, 2025—a date which will live in history—the cultivation community was suddenly and deliberately mobilized for the inaugural Cake Wars.
It is recorded that the spores have been dropped, and the syringes have been shaken. From the pressure cookers of the Trusted Cultivators to the humble Still Air Boxes of the newcomers, a great colonization has begun.
We are not facing an enemy of foreign soil, but a challenge of our own making: the mastery of the PF Tek.
The distance between inoculation and harvest is long. The obstacles—contamination, temperature fluctuations, and the dread green mold—are many. But let it be known that the participants of this war do not seek conflict with one another, but rather a contest of genetics, technique, and patience.
I ask that the Shroomery trust in our Vermiculite. I ask that we hold fast to our Brown Rice Flour.
No matter how long it may take for the mycelium to run, the cultivators in their righteous might will win through to absolute canopy. We will not only defend our jars to the utmost, but we will make it very certain that this form of "cake" shall never endanger our yield again.
With confidence in our genetics, with the unbounding determination of our hyphae, we will gain the inevitable triumph—so help us Spores.

It should not effect the amount of carbonation, but it will affect where the CO2 is inside the bottle, cold liquid holds more CO2 then warm liquid. So while you are pasteurizing some CO2 will come out of the liquid and there will be an increase in pressure inside the bottles.

But after you're done, let them cool, and then put in the fridge, the next day the carbonation should be the same.

If you are talking about the batch that has already started fermenting I would just let it finish fermenting, then move them over to bottles, add suger to get carbonation and then(after it's carbonated) pasteurize. When pasteurizing cider all you need is 1 minute at 60°C(140°F). Source.

I would not use ir to monitor, but rather have an open bottle(same size) of water with a thermometer in it.

It is true that dead yeast can be used as nutrients for live yeast, but just boiling it won't make the nutrients bioavailable.

Kloakk said:
You might already know this, but I want do add(for those who don't know) that just boiling spent yeast will not give much nutrients because they are biounavailable. It is however pretty easy to make the nutrients bioavailble. How? Autolysis.

What you need is a instapot, souse-vide, or other device that can hold the temperature at 50°C(122°F) for 24 hours. Yeast will die quite quickly at this temperature, but their enzymes will not. This releases the normal control a yeast would keep on these enzymes, allowing them to break down proteins, lipids, DNA, and other molecules not normally bioavailable in boiled yeast into a form which is bioavailable. This also breaks apart the yeast cell sufficiently to free all the nutrients.

It's how Lallemand makes Fermaid O.
