why clones to Agar? Why not just clones to bseed?

Why is it recommended to take clones and place them on agar plates? Why not just use pieces of mushrooms to innoculate a jar freshly sterilized substrate?

just chopping up a nice fruit and using it to innoculate fresh substrate works well.....sometimes.
The point of the agar stage is to make sure you're transferring nothing but mushroom mycelium. Even if you "sterilise" tissue samples with h2o2 that won't kill any rogue moulds which may have germinated on your lovely shroom. A perfectly contam-free looking shroom can have loads of germinated, but starved, mould mycelium all over it. This isn't a prob usually, but if you introduce these thingys to a nice nutrient rich jar of eg rye they can easilly take over the lot.
Even if you just use flesh from the inside of the stem there will invariably be _a few_ bacteria floating about.
Having tried straight shroom to grain transfers, I've had about a 20% success rate, and had to chuck pint after pint of stinky and/or mouldy rye.
If you've got more grain than patience then it's worth a go, otherwise agar is the better bet.

Does that mean that the nutrient content of Agar is somehow more tuned to prevent growth of other organisms and promote growth of mushroom mycelium? Then why not use large amounts of agar instead of rye or birdseed altogether?

To clarify what Champion said;
On agar you have a nice 2 dimensional surface where it is much easier to scan for contaminants. With better oversight you can then transfer out the healthiest, contam-free mycelium until you are sure you have only mycelium (short of using a electron microscope) and nothing else.
This give you a a great advantage as you won't be introducing any competitors along with the mycelium. So you have a better chance of "winning the game".
