pressure cooker at 5000 ft

pressure cooker releases pressure at 15psi. being at 5000ft will there be enough "heat" or "temperature" to steralize stuff?

Im not sure what your saying. But yes, you do sterilize at 15psi for usually an hour.

The heat required to reach 15PSI is plenty for sterillization. If not more because of the air being thinner at 5000ft.

According to that chart - at 5,000 ft. you would need a pressure of around 21 PSI to adequtely heat the water to sterilize your jars.

I would be 100% absolutely sure that your pressure cooker can handle that much pressure. We're talking nearly 4x standard atmospheric pressure, and if there is an explosive decompression...it can be quite explosive.

that's why i am asking. some say you need the 21 psi at 5000ft elevation to equal the heat of 15 psi. but you can use longer time. but time doesn't directly correspond to heat so i'm not sure really what matters.
i know of no pressure cooker that goes above 15psi, especially the ones sold locally here at 5000ft. going above that would be dangerous too.

you would need a 21lb rated bobcock (the dancey thingy) to reach 21lbs of pressure. my Pressure canner guage goes up to 20lbs and then says "caution" after that. i would recommend just adding time to the duration of the PC run because high pressure would make me nervous... hell 15 pounds is enough to make me not want to be in the same room with the thing. or you could consider getting a really badass pressure cooker.

i saw my mom's pressure cooker blow its lid one time when i was a kid... man it was scary.

You will have to sterilize for longer times, or do PF cakes with no endospores.
You can increase the pressure, but it is not worth the risk.

Hogwash. I sterilize everything in my PC at 15 psi for 2 hours. I have NEVER had a problem with my jars, ever. Take a look at my location. Mile High city baby.

15 PSI at 90-120 minutes should do it fine.

Q. Are there any adjustments that need to be made when pressure cooking at high altitudes?
A. When pressure cooking at altitudes over 2000 feet, the cooking time should be increased. Increase cooking times 5% for every 1000 feet above 2000 feet. Increase cooking times as follows:

3000 ft: 5% 4000 ft: 10% 5000 ft: 15%
6000 ft: 20% 7000 ft: 25% 8000 ft: 30%
