Mushy rye
    #399102 - 09/20/01 12:20 PM (23 years, 1 month ago)

I just pressure cooked 7 quart jars of whole grain rye. I put 2/3 cup of rye and 3/4 cup of water in each jar. Pressure cooked for 50 min at 15 Psi, and now am allowing them to cool on a towl. My question: is it okay if the rye at the bottom is kinda mushy, as if it asorbed more water then the rest, I shook the jars to try to get what was on top to the bottom so It could soak up a bit more water.

The water ratio is not too bad, should be a little closer to equal w/ bit more water.
Always had problems with contams using this method. Endospores are not killed at top of jar during PCing.
If you see contams soon try this: Boil bucket water, dump in bucket rye,(mop bucket does 14 jars) cook 45 mins w/lid stirring occas.
turn off heat and let sit 5-10 mins. Put top of pot into jars. Strain rest, let sit, finish jars.
When rye gets mushy it's a goner. Too many split kernels are disaster.
Pcook for 70-80 mins. 15lb.

That's too wet. Try 1 cup rye with 2/3 -3/4 cup water.

Well I opted to just do it over, and this is what they look like now. 8 ounces (1 cup) rye 7 ounces water. This better then before?

Just a friendly tip, but if you dont want to get that white residue on your jars from the water used during sterilization, simply add about 2 tablespoons of white vinegar to the water. Doesnt look too bad on your jars, but I guess diff peoples water quality differs. So if you dont like it, vinegar is your friend.

we always use 1 cup of rye and one cup of water:
175 grams of rye
230 ml of water

Our spawn looks like this (after pressure cooking for one hour). The bottom kernels are always a little bit mushy, but when you shake the jars while they are still hot you will end up with a pretty good substrate.
