The "Right" way to prepare rye
    #413880 - 10/04/01 06:32 PM (15 years, 2 months ago)

There seems to be much controversy in how to prepare rye grain.
Some say to boil the rye before PCing
Some say to let it soak in water for 24 hours
Stamet's says to just put 1 cup rye per 3/4 cup water directly into the jar and PC.

So according to your opinion...what is the best way?
Personally, I have been using Stamet's method and have found no major problems with contamination. The grain does seem to be a bit dry, so I add a little more water for each jar.
I am talking, of course, of "shakable" rye. Some use 1 cup rye to 1 cup water, but say that it is not shakable.

I'm pretty sure that putting the rye directly in the jar with equal amounts of water is perfectly fine. im just wondering, do you seal the lid completely and then hide it in the dark?? Or do you poke holes in the top or somethin..
peace

its not gonna be like you think it is - thats one thing you can take to the bank.

I poke a hole in the top about the size of a dime and either fill it with polyfill or put a filter disk underneath. Then put them in the dark.

Ive done it both ways, Ive put 1 cup of rye with 1 cup of water into jars and pcooked. And also Ive brought the rye to a boil then simmer for 45 min. Both ways I innoced when they were room temp. Seems to me that boiling then simmering for 45 min colinized faster. I did these a few days apart, just pcooked first, and thoes jars are still colinizing (about 50-90%) where as the other method has already been cased as of today.

I ran into some problems just adding water and grain to a jar and then pcing. The colonization took forever
if it caught at all.
Yea boiling then simmer seems to do the trick.
Cooking white rice till nice and tender then pcing works wonders as a means of spawn production.

Another good thing to do after simmering for 45 min is to rinse em off. Get all that carmalized gook off. It helps it non-stick so it will grow faster and easier to shake. Then PC.

Can I use rye and NOT use a PC...cuz I dont own one and I DO NOT wanna grow my PR's in BRF.If I soak for 24 hrs, then boil/simmer for 45 minutes, fill jars and use the boiling water in pot method for an hour....will that sterilize the rye or am I just gonna end up with a big mess? If this will work, can someone tell me this.... after the last step of rinsing the rye following soaking/boiling etc.... when I get ready to put it into jars for the pot'o water method, do I need to add more water or not. I wouldn't think so...seems like it would be too mushy.....and not in a good way :)

Someone....??????? Anyone????/
I want to start this project tomorrow.

Thanx,
~K~

no.
You need a pressure cooker to bring the temperature to a level that will kill endospores within the grain.

no need to soak the grain
i use a little less water than rye say 1 cup rye to 5/6 cup water for optimum wetness and shakability

its good to add a tsp powdered oystershell/calium carbonate
