concerns with rye/ fp bags

Hey Guys, Decided to graduate to spawn bags and have a couple of concerns. Been using qrt jars for a while now and have had huge success. So I assumed the transition would be an easy one. The bags are from FP. I have been pre-cooking rye as always, allowing it too steam off for an hour to remove excess moisture. PC'ing two bags (10qrts) at a time. I have been using rye spawn from qrt jars(about 125-175 ml) to innoc the bags. The problem is there seems to be too much moisture left in the bags. A lot of condensation is forming on the inside and causing some mushy spots. Temps are fine at 86f. It seems the spawn starts out fine, but then stalls. And I know from past experiences that mushy rye spells disaster. Should I be putting less rye in the bags? Perhaps 2-3 qrts. Is it best to sit the bags up while they colonize or lay them flat like a pancake. Does it even matter? The bags are allowed to cool overnight before innocing. Should more spawn be put in. I've heard 5-10% by volume, is this about right? Anyone with experience with these bags have any insight here? Thanks in advance.

yeah, I know you shouldn't cross post. The traffic is just better here. Next time, I'll post here. By the way ar393, what do you use now for a filter on those kegs?

MM filters...they are big enough, what i did was i took the pretzel keg top, poked a hole in it (about 1/2 inch from the side) and used a small toothed saw to cut a circle out of the plastic top so it creates a ring like the canning jars and do the same thing as you would do on a quart jar.... but the plastic on the kegs shrink when PCed (it basically shrink wraps the rye) so i use one keg to PC and then breeak that into a few other kegs....which reminds me, i need to get some more kegs.... peace ar393

This dog I know kinda third hand is moving from jars to bags and tried to use plastic oven roaster bags with really bad results. With a mix of verm/rye/finch feed/brown rice/BRF that has worked great in jars he had massive green mould about 3-4 days after inoculation. He has never pre cooked the rye, only rinsed it and let the whole mess soak for about 15min before canning and pressure cooking. In the past he has had a very low contam rate (about 5% of jars) and a fairly low rate of contams when fruiting. Shaker "What made you think that was pudding?"

main reason to pre-cook for 45 mins or pre-soak for 24hrs is to allow the grain to 'open'. Which allows the 'endospores' within the grain to be killed during pc'ing. More than likely your green mold came from endospores.
