MushMush Rye Tek Q

Hi

I notice that in the photos of the rye tek on the MushMush site (www.mushmush.nl) the rye that is being poured into the tray to be cased is brown. I've found that when I shake rye to pour out that it loses some of the snowy whiteness but doesn't go brown. What's the story here?

You refer to this pic i think.




The grain in this pic is really fully colonised.
It really depends on how long you let the the jars colonize. Because used liquid inoculation(10-20 ml per jar) the jars are fully colonised very fast and homogenous (with one initial shaking). It does not have the time become very thick and ropy.
If jars are incubated longer than necessay the mycelium becomes very thick and hard to break up. When this happens it's hard to get the grain out of the jars (especially the tapered ones we use).
The fluffy mycelium "disappears" during shaking, and that's why the grain in the pic looks brown.
If the cased grain is put in a warm place only after a few hours you can see the mycelium growing back.
