Shit I just started bawling just remember that my best friend died 11 years ago today he was only 21. First heard act right from him, I miss you Ryan. I feel so bad not even remembering it until it's almost too late

I confess that I made some bomb ass dinner 2nite: seitan in a lemon basil lebneh sauce over rice w a side of cauliflower. the picture isn't pretty: everything is some shade of beige. but holy fuck it tasted so good.

did I do the confession right? am I supposed to post this somewhere else?

The sauce was pretty easy.

I started with canned whole tomatoes to save a bit of time, but fresh would've been better.

I sautéed some onions until translucent and added some garlic. I used two small onions and two heads of garlic to three cans of tomatoes. You don't have to use that much though.

Put the tomatoes with juice and onion/garlic in a blender. Blend until smooth

Then add spices. I used Basil, parsley, a pinch of cumin, pinch of chilli flakes, smoked paprika and black pepper.

I then simmered it down for about 40-50 minutes with a couple bay leaves.

Then came about a cup of cheddar and a half cup of Parmesean. I waited until this point to add salt because the Parmesean is quite salty on its own.

It was a bit acidic so I used a half tbsp of sugar. Carrots work better, but I was out.

Then I added a cup of heavy whipping creme.

For chicken I just shredded some leftover chicken breasts and thighs and added pre-boiled penne. Make sure you add a ladle or two of the pasta water to help it stick to the pasta.

Prep time was maybe 15-20 minutes. Rest of the time was just simmering. It made a metric fuck-tonne. There's still like 6 lunch trays left over, but at least two will be gone tonight when my son and his gf get home.

It's nothing special, but it is simple, good, and easy.

also, thx dragon... idk why I thought marinara needed vinegar or something? because marinara is so different from, like, spaghetti sauce, right? Like, if I dipped some crazy bread in some spaghetti sauce I'd be sad
