Tested: Dehydration temperature vs potency * 20

I have wanted to put some hard data to the “best” dehydration method discussion for a long time. I finally buckled down and did it, (actually, as write this, I am in the middle of the drying processes). Yes, this is going to be wordy and needlessly long. My defense is that I want to explain as much as I can to eliminate as much doubt as possible. I will answer follow up questions and may repeat the experiment with suggested deviations if time, resources, and interest allow. TLDR at the bottom of the OP under Results and Conclusions.

There has been much discussion, sometimes outright argument, about the best temperature to dehydrate mushrooms. The majority of advice from experienced Shroomery users for the past decade or more has recommended dehydrating in a purpose-built dehydrator on the max heat setting (generally 160 to 165f or 71 to 74c) for 24 hours. However, many users cite older posts by prolific users that state that higher temperatures are known to destroy actives and recently there have been a few published studies that can be used to infer that this may be the case as well. In addition to this, others have stated that higher temperatures may actually be more desirable because they would stop enzymic action or speed up the drying process.

My position has always been that no amount of theory or extrapolation beats unbiased testing. While I have followed the recommended 24 hours at 71c (160f) with excellent results, I refuse to proclaim that it is definitively the best method without some rigid testing and results. We know it is reliable, but not necessarily that it is measurably better for protecting potency. So, I set myself the task of designing an experiment that should limit the variables as much as possible. The following are the procedures followed and then the results.

Test parameters:
Using fresh Golden Teacher Cubensis grown specifically for this test. (Thanks to Womble for the spores)

Tracking four methods listed from highest to lowest temperatures:
  • Air fryer oven at 85c (185f)
  • Dehydrator full heat at 71c (160f)
  • Dehydrator lowest heat at 35c (95f)
  • Desiccant air dry at 25c (77f)


To compare methods while minimizing variables:
  • Use several (8) mushrooms that I split vertically twice, and trim as needed to get 4 equal parts by weight.
  • Separate them into 4 samples using one quarter of each mushroom in each sample. This eliminates any potential differences due to different individual fruit potency.
  • Place one sample in an air fryer with a dehydrating setting at 85c, another sample in a standard dehydrator at 71c, one sample in a standard dehydrator at 35c, and the final sample in a desiccant chamber at 25c.
  • With equal starting sample weights, the final weights of each sample should be nearly the same if all methods remove all moisture.
  • Once all mushroom samples are dried (determined by checking for no weight loss over time) and equal weights each sample will be powdered for testing.
  • Each sample will be potency tested using Miraculix Qtests and a colorimeter which should be reliable to within +/- 5% accuracy.
  • Test each sample 5 times to find and eliminate any anomalies by dropping the high and low readings then average the remaining three.
  • If one method is clearly superior by a margin of greater than 10% then we will have a result that I am willing to defend.


Notes:
  • The eight mushrooms were selected for thick, straight stipes to make splitting them into equal samples more manageable. The quartered samples were each weighed and trimmed if necessary to get matching sample sizes from each mushroom. The total weight of each sample composed of a quarter of each of the 8 selected mushrooms was 7.5 grams.
  • In the air fryer, trays were placed above and below the sample to prevent direct radiant exposure from the heating elements. The oven was preheated and the samples were weighed every 30 minutes until they stopped losing measurable weight.
  • In the dehydrator set to max the sample was dried for three hours and then weighed hourly until the weight remained the same and was approximately equal to the air fryer dried sample.
  • The dehydrator on min was run over night and then the sample weighed every two hours until the weight stabilized.
  • The room temperature desiccant sample was left over night and then the sample weighed every two hours until the weight stabilized. To do the desiccant dehydration, I placed the contents of two tubs of DampRid in the bottom of a plastic shoebox with a paper towel on top and the sample on the paper towel and closed the lid. Side note that I was surprised to find that this sample lost weight faster than the dehydrator on the lowest setting.
  • Keep in mind that each sample was very small and each piece was sliced into vertical quarters. I believe that contributed to the short times required to reach stable weights. For larger batches with unsliced mushrooms the drying time would likely be much greater. Particularly in the case of the desiccant drying. 594 grams of DampRid to 7.5 grams of split mushrooms was quite effective, but I suspect that would not be the case with a much lower ratio for a full flush of mush.
  • Most potency results were nicely consistent with three noticeable outliers. One high and two low compared to the rest of the readings for each sample. The miniscule weights at the threshold of the scale’s accuracy, slight inconsistency in the grind of the mushrooms, and the +/- 5% accuracy of the colorimeter & Qtest combo may account for the differences. That is why I did multiple tests on each sample and eliminated the high and low score for each. That made for an expensive experiment, but the three anomalies were each from a different sample and the rest of the readings were within 3% of each other giving a result that I am quite pleased with.

Results:
The moment that I made you wait for (unless you skipped to the end as any reasonable person should).


Conclusion:
  • It turns out that dehydration on the lowest temperature setting does in fact lead to slightly more potent dried mushrooms. In this test there was an improvement of a little less than 3% more actives when dried on the lowest temperature versus the highest temperature on the standard dehydrators.
  • The 3% is within the stated +/- 5% accuracy of the Qtests, so we can’t call it significant or even certain. But I am fairly confident in the results given all of the precautions stated above.
  • Since the difference was so slight, I will still dehydrate mine on high to eliminate any doubt about getting them sufficiently dry for long term storage and continue to recommend the same. In a follow up test, I will compare the shorter and longer drying times following the same methods as this test.
  • The higher temperature of the air fryer did not result in better potency preservation. It is fast and effective if you are ready to watch it closely, but not as safe for the actives. My air fryer may not move as much air as others, so I would not call this a definitive test. In a pinch, it is possible to use air fryers to dry mushrooms if you take a few precautions, but it does not appear that using a higher temperature than a typical dehydrator improves potency retention.
  • The desiccant surprised me with its speed for a small quantity of mushroom segments. However, this is not a solution that will scale well. As mentioned in the notes section, the ratio of desiccant to mushrooms here was quite effective, but not reasonable for a full flush. Again, in a pinch, it is a pretty good option.


Postscript: I have other test results to post shortly but wanted to get this one out first. Nothing as controversial or interesting to the gen pop. Just continuations of other things I have been working on for a while. I also have some more GT almost ready for that longer dehydration time test mentioned above.

If you plan to use them in a short amount of time, the lower temperature earns you under 3% based on my results. However, I would not recommend risking your whole grow for a 3% gain in potency if there is a chance of 50% or more loss in potency due to storing without sufficient drying.

If you take the time to repeatedly weigh the dried mushrooms until they stop losing weight so you know that they are 100% dry you are probably good. But I will continue to recommend 24 hours on high to minimize that risk. It is just a more idiot proof procedure for such a small cost.

This somehow answers the question I was asking myself. Right now in the summer with very low RH, it takes me 24 hours (~29c) with a simple fan to get to leather-dry with a snap, and just a few more hours in a jar with silica gel for cracker-dry.

So now I don't think I'm losing much potency.

That was something else I wanted to mention, so thanks Belintaf.

The fan and desiccant were both effective in my test here in the desert. I would trust the desiccant chamber over the fan if I lived somewhere more humid. That isn't something that I can easily test, though. It is monsoon season here and the rh is still only 20% right now.

I've been thinking about this more since getting the Excalibur. Things seem to get cracker dry at around 12-14 hours, with no more loss of water weight. It fans the air horizontally as well, so all trays get equal flow.

I've been running it at a slightly lower temp (145) because of the concerns of what heat does to the actives.

Here are some questions that I have that perhaps you are willing to try:

1- At cracker dry, what happens if you dry it for another 6 hours, or 12 even. Like, do we keep loosing actives once full dehydration happens? If so, that is VERY important to me, because like I said, I still tend to have it going around 24 hours same as you, creature of habit and community consensus, BUT, if the actives continue to degrade (why wouldn't they?), that is a big problem,  and it means that at least with an Excalibur, we should really figure out the ideal moments.

2- Any ideas for split vs whole testing? Split can reduce the time required, but it does cause bruising, which means stuff is oxidizing. this also means that more of the flesh is being exposed to heat and air, and perhaps that further oxidizes the actives.

3- I would really like to know the potency difference of a Nesco running until cracker dry vs Excalibur. Like, let's say the Nesco takes 24 hours, but the Excalibur 14. That same half of the shroom could provide very important data.

4- Back to question 1, if you pick the densest shroom, and in one hour there is no weight change, is that likely a representative of the entire batch? I've been doing samples from each tray just to more data points.

I like where this thread is going and seems to be about what I expected. Just want to clarify if the samples used were a clone or isolate? I'm sure they were.

Also I would be interested in attempting the mentioned high RH tests myself, as I live in a humid area. I do not have the same cultivator used in this test, but I do have several different cultivators of cubes that will be in need of drying soon.

Are there favored procedures or TEKs for fan and desiccant drying chambers that I should use? I will use my dehydrator as a baseline, and I have an air fryer that someone gifted(weird gift right?) me I could test with as well.


The more I learn, the more I realize how little I know.

Huh, seems I was on to something using the middle setting on my dehydrator, since I'd bet similar rules would apply to other thermosensitive compounds of non-active species.  God, I wish I had the patience for lab work like this.  Good work, homes!

I remember going by PF's copied pages of tek in the 90s, drying my stuff in tupperware with desiccant, and it keeping pretty well. I was grinding and going in capsules back then, and probably didn't keep anything over 6 months but it held up pretty well.

I've gotten wild Liberty Caps here in Europe from friends a few times, which I think were just air dried but pretty fresh. Those bastards are so wicked they worked fine, but heard plenty of stories of them going moldy.

So it seems the thinking man will be sticking with full blast dehydrator. The total lack of water has to be more important for long term storage than a few percent plus potency.

Thanks Pasty, they were a first gen clone from a multispore from a print I got from Womble. By first gen, I just mean that it wasn't a clone of a clone, etc. That is why I split each mushroom 4 ways and weighed and trimmed each piece if needed to have as close as possible to the same potency in each sample. I picked GT because I reckon it is about the most stabilized line in wide circulation.

1. My next test will be a sample split the same way dried for the minimum time to stabilize weight (guessing about 4 to 5 hours based on this test) then again at 24 and 48 hours in a dehydrator at probably 160f.

In my experience, once the water is all gone, very little potency is lost from time, temps (under 50c), or light, whether whole or powdered. So I suspect that there will again be very little difference in potency between 5 and 48 hours in the dehydrator. But we will find out in a few days time.

2. Split vs whole. The only reason that I split these was to get 4 very nearly identical samples. I don't really see a way to test split vs unsplit because of the variability from one mushroom to the next. Unsplit would always be my recommendation until they are fully dry unless they simply will not fit in the dehydrator any other way. If that is your problem, I would not be losing too much sleep over it, though.:grin:

3. To me cracker dry is cracker dry. If it turns out that time is not a huge factor, and it doesn't seem to be based on the fact that low heat at 19 hours was slightly more potent than high heat for 4, then I don't see why one brand would have much impact if the temperatures and air flows are similar. There might be some slight difference, but again, if we are talking about a couple of percent one way or the other I would place my efforts elsewhere.

4. This is where your Excalibur shines. If it is the type I am thinking of, they blow the air across the trays instead of up or down through a column of trays like Nescos do. So I would expect that once the largest and densest mushrooms are dry the rest are probably good. But let's get that longer drying time test out of the way first, because if longer times do not harm actives, why not always give them a little more time than they absolutely need to be sure that they are dry?

I don't know if there are fan and desiccant standards for drying. I have disabled the heating element in one of my dehydrators to use as a fan dryer, but I doubt that this how other do it.
I would like to see if it is even possible to get mushrooms completely dry without heat in a humid environment. I think a better test of this would be to try drying them using fan only or desiccant only or both in whatever combo is recommended and then weight them until they no longer lose weight. Once the weight is stable, take those dried mushrooms and place them in a dehydrator at max heat for say 12 more hours and weigh them. If they lose more weight, it is probably safe to assume that they were not truly dry at the end of the fan/desiccant cycle. That experiment would not even require QTests, so I hope we get a volunteer who will share results in this thread. Anyone in the PNW or tropics willing to offer up some sacrificial data? Shouldn't even really cause much in the way of losses in the end.

I believe I have everything I need besides the Qtests on hand, is there only one supplier for these? $25 per seems steep as I want to use them for several other tests.

I should have some actives ready for this test in the next 2-3 weeks.

I will use this time to research the drying methods and set up my procedure.


Also I'm in the subtropics RH indoors with AC running is consistently 50%. Outdoors swings wildly, but almost always above 30%.

I buy the bulk kits for the colorimeter which makes them cheaper per test, but still not cheap. The individual tests are pretty pricey. I couldn't afford to do all of my little experiments if I had to pay full price.:moneyeyes:

It is a proprietary formula developed by the folks at Miraculix.<-external link

A bit more about the testing process and tools on an internal link. Just my early ramblings about using the colorimeter and qtests.

There was a blog post somewhere that detailed the process that they used to develop the formula, but I couldn't find it in a quick search just now.
