questions about beef supreme's guide and issues I'm having

Hi all,  I have followed beef supreme's guide to growing mushrooms but have run into some issues and wondered if anyone had any thoughts and guidance.  I used soft white wheat and cleaned and cooked it slowly as per his instructions.  Dried it in a herb rack and then put it in quart jars with lids that have a injection port and a breathing hole. (see images) Pressure cooked them with tin foil on them for 90 minutes and unfortunately after taking them out I did not remove the foil.  I had four beautiful agar plates with my mycelium ready to go and discovered that the jars had a bunch of moisture in them.  I decided to inoculate 2 jars with the moisture in them as an experiment and the other two I let dry over night until the wheat rolled around in the jars without sticking.  Both, after inoculating developed bacteria or mold.  So, my first question is: Do I need to pressure cook the jars with foil and if so, I'm assuming I should take the foil off after cooking to let the jars breathe?  The second question is about my agar inoculation.  I found that when I put the chucks of agar into the jars, they stuck to the sides of the jars when I agitated them to mix.  Has anyone experienced this?  Any suggestions as to how to avoid this?  Any help would be greatly appreciated.

Hi Relaxed :wave:

90 minutes at 15 psi should suffice. I leave my jars with the foil still on for days before I inoculate them and haven't had any issue, depending on your filter you might not need the foil, but I prefer to have my foil on until I inoculate.

On the contamination my guess is either your plates wasn't clean or something got in during inoculation, sorry to hear it :sad:

Nothing else to dot then make a new batch though and try again :rockon: Only sure way(as far as I know) to avoid getting the agar stuck to the glass is dropping the wedge in the jar and let it colonize the top while the agar dries out for a week or so.

Do you notice any moisture in your jars after pressure cooking and waiting a few days with the foil on? Beef said that moisture is a real killer for what you're trying to do.

If my grains come out too wet I shake the jar(s) every 12 hour or so until they are dry on the surface again before I inoculate. A sterile jar is a sterile jar, but bacteria moves a lot slower on grains that has a dry surface and spores won't germinate as quickly.
