If I remember correctly, Bod stated, you can submerge them about 25% up from the bottom. I have done it a couple times when I load 10 instead of 7 in my presto but may want to wait for another opinion.

Don't instapots and the like only get up to 11 PSI?

I think as long as the water doesn't go more then halfway up the jars you okay, I have to use half pints in mine since quarts dont fit and I usually have water coming up about 1/3-1/4 way up the jar

Mine has a low and high setting low being 11psi and high being 15 they work I just run it 30 mins longer

save the instapot for food or return it and buy a presto 23q and with the money you save buy some jars too

Totally fine to have your jars in a little water. Last time I did oats in my All American 921 I had water up the sides a little bit (due to not being careful) and they came out perfectly. But yeah, as bod said, get a proper PC.

The water level in your PC can be 3/4 of the way up the side of the jar with no problems, so long as the tin foil is tight around the cap and water can’t get in.

My PC has a minimum water level and a maximum water level etched into the inside.  When you’re at the minimum water level, it is 3/4 of the way up the side of a pint jar.

No it cant.... I'm sorry but this is bad advice in a 23qt or presto I use 1qt of water ... which the water is about maybe an inch up the jars ... I weigh my weight with 3 25cent quarters and PC at 17psi for 2 hours .. we are using steam to basically pasteurize since we dont get true sterilization .. using that much water I doubt anything will cook right I mean you might as well just boil the jars

Measure three inches up the side of a pint jar. 

Even 2 1/2 inches, if you want to assume the canning rack is half an inch thick, is half way up the jar.

My grandmother taught me how to can food three decades ago as a small child, I am 100% certain I’ve got this one on lock.

Canning food and making grain spawn is way different ... telling people to add water 3/4s up the jar is bad advice and there is no need for that much water ... I can tell the difference on how my PC cooks by just a half qt of water and how much longer it takes ti get to pressure ...


I mean a pint would be lower to water level but that's crazy high ... Idk I have been seeing alot of oddball shit lately on the boards..

We're not pasteurizing we're sterilizing. The SAL(sterility assurance level) is questionable however.

Raise your trivet if the jars are more than half submerged in water.

We should call emeril and see what he says ... fact is we need steam not boiling water ... using soooooo much water is going against the grain ... if you need that much water you aren't cooking properly plain and simple...


Bodhi I understand its not pastuerizing... but it's not sterilizing either ... what happens when we pastueriz horse shit ? We are making a long enough window for the myc to gain control same with grain ... so I guess I should say we are partially sterilizing ??

I swear to you that 3/4 submersion doesn’t hurt, but if you’re nervous about it, the best way to raise your canning rack is to simply put a towel in the bottom of the canner and place the rack on top of it.

You don’t even know how a pressure canner works, do you?

The whole point is to let water boil at 250 degrees F.

So that the water raises the temp inside the jar to 250 degrees F.

The steam exists ONLY to pressurize the vessel, move the conditions to the right of your phase diagram, and let the water boil that much hotter than 212.

Real talk: It doesn’t matter what state the water outside of the jar is in, what matters is that it is 250 degrees, and can get the center of your jar to 250.

Oohhhhhh my gooooood this whole time I thought pressure had something to do with it as well ?? So you're telling me if I put a jar in the oven and allowed it to get to 250degrees it will work?? Well fuck i suppose I spent all this money on pressure cookers for no reason I guess I'm an idiot for buying pressure cookers and not an oven

The steam penetration is through the lid anyway and steam is lighter than air. The entrapped air and porous load are why our sterilization times are so long. Jars can be 3/4 submerged. Steam is still being created and doing sterilization.

Gravity sterilization (no vacuum pump) (IE pressure cookers) will always fail the bowie-dick towel test.
