pressure cooker question

Hi, I'm at my third try and have some contaminations problem. Here my questions :
- When i pressure cook my jar with my grain, am i suppose to close the lids of the jars OR to let them lose a little bit to let the steam enter inside the jar. I first thought that steam could pass trough tyvek but now I'm no more certain as I got some contams!
I think that I have a major problem in my sterilization procedure as I got 100% contams. I'm using tyvek + polyfil to sterilize rye grain! Please help, thanks

Explain how you prepare your Rye grain...
this might be your problem.

I first drop the good amount in a big bowl and put a lot of hot water in it. Enough to submerge all the grain and let the grain soak in this water for 24 to 30 hours. I always look at the grain 6 to 8 hours later to be sure that there's enough water left. I then well rinse the grain in a spaghetti drainer and let it soak for about 5 minutes. Now i fill my 500ml. jar to a 3/4 level, place the Tyvek sheet (from fedex) and place a polyfil ball in the jar top, and then close them with the jar lid, close tightly. Now I put 2 foil lid over the jar, and put in the pressure cooker. I first let the steam escape 5 minutes before putting the pressure gauge. Then I let sterilize for 1 hour to 1hour15 at 15 psi. When pressure is come down, I take my jar when still pretty hot with a laundry and shake them all then let them cool down 12 hours. I then remove the 2 foil lid and proceed to the inoculation procedure with all the sterilization procedure involve..

I would increase the sterilization time to 2 hours. Your methods appear sound, but longer PC times ensure sterilization.

2 hours my ass plzz at 15 psi 1 hour is [plenty but don't listen to anyone telling you 2 hours..you'll over cook your grains .. if you haven't learned yet it's not the pressure cooker it's you that r having problems...your not being steril enough i just did 48 jars qaurt size and not 1 contaim yup not 1..why?
because i fucking clean the hsit out of my kitchen and i have middle island that i work off of. so the jars r seperated from everything else..plus i have a hepa filter that blows over my jars with ion filter. wich now 2 times in a row have yet to leave me with contaims

1 hour isn't enough.
I sterile Rye for 1 1/2 hours... this might be your problem.
how big is your pressure cooker? how many quart jars are you sterilizing at a time?

Does the Rye seem too wet when you put it in the jars?
You might want to let it drain longer.

I wouldn't use polyfil and tyvek together...thats a little overkill in my opinion. You want air exchange...and using both might hinder that.

I'm assuming by "soak" that you mean "drain" and 5 minutes definitely is not long enough.

Ok I didn't know for the sterilization time, I'll sterilize 1 1/2 next time.

For my pressure cooker, he measure 14" of diameter and 6" ? depth! I put 9 500ml. jar in it when I sterilize. Here a pic with empty jar :

The grain look completely wet/full of moisture when I load my jar but I don't have any problem of grain stacking together!

In fact, at my 2 first try, I was using both, and the third try, I was only using tyvek.. here a pic of my jars full off the green stuff : (look at these sexy chick )

I order them from sporeworks and preserve them in a refrigerator, in their original package.

just look under my pressure cooker and it's a mirro pressure canner M-0512-11 12 QT. (11.4 liters)
