im surprised noone had anything to say about this.. i know that there is some contraversy regarding sterilization of caseing layers

I am curious to see some further data on this. I think that I have narrowed down the cobweb mold problems I had seen on casing layers to sterilization and poor air circulation. In the future, pasturization or possibly the vodka tek seem like more viable approaches. There is almost a gallon of sterilized 50/50 casing mix sitting on the counter. In light of your post, it might just stay there for a month. :wink:
