I usually fill with enough water to come 1/4 the way up the jars. I found if you fill it half way up the sides of the jars, water splashes all over inside and waterloggs a few jars. That could just be my pressure cooker, I dunno?

I had a bit of trouble with my p-cooker as well (deluge in a jar) with a batch of amazonian strain from Spore Chicks. Upon reading fellow mycologists responses to my problem, I determined that the water level should be JUST above the wash cloth which you set the jars on (or metal rack which my cooker happened to come with.
Oh, by the way, I just couldn't bring myself to toss the flooded jars and was happily suprised to find them colonizing weeks later!

Hello,
Use the rack and if its high enough you dont even have to have the water touching the jars. You should have at least an inch of water from the bottom of the pan in there, if you cooking longer you need more water, last thing you want is your new cooker drying out and fucking everything up. you can also layer the jars in the cooker, hjust do i so they are criss crossed, so you not sealing the tops of one jar with the bottom of the other. Good luck p cookers are the best investment a mycologist can have, well next to a good strain of cubes. :smile:
