Excellent article backupwards but it does fail to answer needsomemagic's basic question. Agar is a foodsource for growing mushroom mycellium. The mushroom grows across the surface of the agar gel without penetrating it. This makes it easier to spot contams like bacteria or competing fungi. You can then isolate the most aggressive growing strains and use them to get consistent batches of mushrooms.
When you do a multispore injection in a pf jar you are hoping that you get an aggressive strain to colonize the jar. Some jars finish faster then others and the reason is the variability of the genetics between jars. A pure strain will always perform virtually the same in every jar that it is used to inoculate. Equal quantities of grain will often finish colonizing within a couple of hours of each other and the fruiting will be about the same from all of jars.
This is the advantage of agar over multispore injections but cubes tend to grow so aggressively in BR substrates that this variability is not a real concern and agar is a major pain compared to the simple PF method

agar is a solidyfing agent, for nutrient solutions, to simplify handling etc..
agar-agar itself has no nutritious value
