I don't believe there is any such thing as too much air exchange, only too little. In the wild mushrooms do best-- you can't get any higher air exchange than the great outdoors.( not without preassurized conditions)
You friends problem probably lies in one of these things:
Patience(very common)
Humidity-try letting them dry out pretty good then start misting again.
Substrate-too nutritious causing overlay or not nutritious enough to produce fruits
Casing-too nutritious,or too thick.(pH sometimes can be a factor--but not usually unless it is some off the wall material)

you lost me? No, just kiddin.
Technically, you can have too much air exchange for a given volume- remember you are trying to simulate thier natural enviroment. So what ever the natural air exchange rate is should= ideal. I do not have the figure so I will pressume that it is some where in the range your book describes.
I am not familiar with your set-up-- it is not the technique I have seen used.
Also have never seen problems with air-exchange(in the excess).
Sorry I was no help on the subject.
Hopefully someone will reply that may be able to help you further.
Do a search if you can. McMan seemed to be a whiz at the air exchange game--too bad he is gone(I hope not)

If you read the P.cubensis Growth Parameters( kickme.to/growparameters ), you will see the following:

Post Casing/Prepinning:
Relative Humidify: 90 + %. Substrate Temperature: 84-86?F.
Duration of Case Run: 5-10 days.
CO2: 5000-10,000 ppm.
Fresh Air Exchanges: 0 per hour.
Light: Incubation in total darkness
