This is awesome Rev, thanks for taking such detailed and thorough notes! I think you're close to changing the standard of 24hr @ 160. I think this testing is brilliant.

Important update.

Follow up test that affects the results of the original experiment.
I wanted to confirm that drying at lower temperatures was sufficient to fully dry mushrooms for storage.

So I performed the following simple test.
With a small flush of mush, I dehydrated at 77f(25c) for 24 hours after verifying that the weight had stabilized and weighed the resulting "cracker dry" mushrooms. Then I dehydrated the same mushrooms at 160f(71c) for 24 more hours and weighed the same batch. If they had fully dried in the first run at the reduced temperature, they would still weigh the same after the second. They did not.<in narrator voice>

The fresh test flush was 129grams from a shoebox.
The low temperature dried mushrooms weighed 11.06g.
The same mushrooms after the hot dry weighed 10.34g.
That implies that the low temperature dried mushrooms still contained 7% more water than the high temperature dried mushrooms.

That result indicates two contrary points to me.
1. If the potency tested samples for the low heat drying were made up of 7% more water then the potency results may be a little off.
2. Ambient temperature dried mushrooms contain too much water for long term storage. They may seem cracker dry, but are not as dry as their heat dried cousins.

So I stick to my recommendation to always heat dry for best potency preservation in storage. If you plan to use them right away forced ambient air may improve the final potency by as much as 10%. Keep in mind that my ambient test was with a relative humidity below 20% so your mileage may vary in a more humid environment. Insufficiently dry mushrooms can lose far more than 10% potency in a few days, weeks or months. Fully dried mushrooms easily hold their potency for years.

Adding this to OP.

Interesting experiment and not unexpected results but could I point out something that you appear to have missed in your calculations. The time that each sample was exposed to the different temperatures varied wildly so the 3% loss in the 70C sample that took 4 hours to dry doesn't reflect what actually happens during normal dehydrator drying where the fruits are exposed to that temperature for 10+ hours. The low temperature sample took nearly five times as long as the 70C sample to dry so factoring that in for time could potentially put the potency loss in the 70C sample at 15% rather than 3%. And multiplying the 4 hour at 70C potency loss to reflect a normal drying time of say, 12 hours, would put the potency loss around 9%.

I do not think that I missed that in my calculations. In fact, I specifically discuss it in this follow up post as the next follow up test on the same page as the OP.

I am continuing to experiment and not just guess and make unsubstantiated claims. Right now I am running a timed test with drying at 4 hours, 24 hours, 48 hours and 72 hours and comparing potency using the same methods as the first experiment. My experience tells me that once the mushrooms are fully dry they do not lose potency even under extreme conditions. This test should help confirm or refute that experience.

As I have repeatedly stated, what I share are the results of experiments strictly controlled to the best of my ability. I do not cherry pick data that supports my beliefs and I do not try to pass off extrapolations as facts. If you have experimental data from your own experience to share or a recommendation for a better experimental design that helps prove a point it is very welcome here. If you do not, please make your own thread to discuss your hypotheses and not derail the ones I create for information rather than debate.

The first word in the title of this thread is TESTED:. That is an intentional statement about the content of this thread. It is about things that I have tested. It is not about things that might be true if we make guesses based on ideas that we just thought up. I always welcome helpful contributions but I have no interest in circular speculation that proves nothing. I prefer citizen science to internet philosophy. Debate is fine for politics but rigor is required for science. Science without rigor is pseudoscience at best.

I am suggesting a better experimental design to help prove the point. Your conclusion of a 3% potency loss at 70C wasn't supported by your evidence as a four hour drying time doesn't reflect the potential loss of potency during normal dehydrator drying times.

If you're comparing drying methods for home cultivators, drying the material for as long it takes under home drying conditions, temperature/time, with each method, then using desiccant to standardise the moisture content of the samples and testing would give more meaningful real world results.

Terrific thread and read as always Myc, we all appreciate you putting in the effort to test these things thoroughly.

I know there's no way to set something like this up in a way that'll make everyone agree with every single decision, but all of these methods seem better and more thorough than what most of us would do when replicating these drying methods at home.

It's cool to know you can perhaps get a little bit more out of your harvest, but unless you're diligent and confident enough to know you got the water out of your fruits - sometimes it's just best to go with the tried and true method. :cookiemonster:

God I love your presence on the board, good stuff reverend.
I anecdotally found that 135f was the sweet spot for having close to 0 bruising/discoloration while also getting crispy in <24 hrs. Not much value maybe but I do suspect there is a middle ground slightly under 160 that may actually be β€œthe best”

Excited to see more :yesnod:

UPDATE 2

I have completed the mentioned follow up tests to determine if heated drying causes potency loss after mushrooms are completely dry.
The tests confirm my experience that loss of potency is significantly reduced or stopped in the absence of water.

For this test I proceeded as before. I took several medium sized golden teacher cubensis mushrooms. Split them vertically into 4 equal pieces. Then placed the samples into a dehydrator at 71c(160f) and removed samples after 4, 24, 48 and 72 hours storing each in sealed glass containers until the last was ready for testing.

The result was that all samples retained the same potency within the stated 5% accuracy of the tests.

So this lends credibility to the often given advice that 24 hours at full heat is ideal to ensure that all moisture is removed. There is no measurable loss in potency caused by leaving mushrooms in a dehydrator after they are fully dry.

The results of the last two tests combined lead me to one more test I want to do. I plan to compare the potency of mushrooms that have been dried at room temperature and full heat for 24 hours after one and three months of storage. The previous test showed that some water weight still remains in the mushrooms when dried in an unheated dehydrator versus a heated one. This test will try to determine if the less dry mushrooms lose more potency than their heat dried counterparts.

Adding the above to the OP.

Now we are sliding into speculation vs data: If the next test results show significant losses from the ambient temperature drying over time it will help justify some of the skepticism about the procedures of many published studies that insist on using room temperature dried mushrooms. Any study that reports potency loss but does not account for drying methods and total removal and protection from moisture should be considered suspect, imho. It is one of my primary quibbles with the various potency cups. Since we cannot know how each sample was dried, packaged, and stored prior to shipping and testing, we really can't make much determination about the relative potency results in those competitions. Improperly dried samples sent to the labs may be starting out with much higher potencies than the final results indicate.

Thank you once again Rev for your holy work.

That's good to know that it doesn't hurt to overdry.

So, your professional opinion is dry at highest temp for 24 hours?

Since we know that overdrying doesn't cause an issue, but lower temps actually increase potency, maybe the sweetspot is something like 135

Would be interesting data to see:

A- does cracker dry happen in 24 hours at 135, 100, 80? if not at 24, then when cracker dry for each temp. I imagine that running an extra hour with no weight difference would be enough to assume cracker dry, or is there a hidden variable there?

B- Compare cracker dry potency of those done for 24 or 36 hours since it apparently doesnt matter, for full temp, 135, 100, or whatever temps you end up choosing.

B is the most important one that does change things, I think. Drying for longer isn't an issue based on your latest result, so its a matter of knowing if its worth waiting longer at lower temps, or even same time at lower temps.

I hope that makes sense, your threads always make my head spin, in a good way.

:loveheart:

Re: Tested: Dehydration temperature vs potency [Re: Huskies] * 4

I have always advised that if you do not lose more weight after an hour you are probably cracker dry. When I tested the room temperature drying, I did get a consistent weight for several hours, but when that sample was then dried at a higher temperature it lost more weight. So I no longer think that it is safe to assume that weight stability means total elimination of water. There must be a sweet spot of temperature and maximum retained potency, but I don't think that chasing a few percent is worth a follow up right now.

I am sticking to the common recommendation of 24 hours at max dehydrator heat and air flow for the most reliable results for long term storage. For shorter storage, lower temperatures may be fine or even slightly better. But for immediate use, I would recommend eating them fresh for best results or dry at max for max potency protection.
