That's going to be a lot of work in a webber.  Might even want to spatchcock the bird, I dunno with one that big.

You're going to have to refill the coals quite a few times, and it's going to take hours.  Brining the bird will be a must.

Looks like webber has a page on cooking turkeys in their grills:
https://www.weber.com/US/en/grill-skills/mastering-poultry/turkey/roasting-a-whole-turkey-on-the-grill/weber-34544.html

There's also cheap counter top roaster ovens that you can do an okayish turkey in.  Goodwill always seems to be full of them.

I agree with. Brine, I imagine a spatchcock to lose more moisture

If you don’t have a fan the following is my best simple tips. It’s been a few years since I’ve done it without the fan but the kettle is remarkably stable.

Spatchcock but I was successful with a whole bird
Snake/offset coals
Almond or your favorite chunk in the coals. About 3-4, one every every 4 coals.
Light 4-6 coals in a chimney and set them at the start of the snake
Aim for 300 - full open top and 1/4 open bottom
Likely 2-2.5 hours to 160f

You lose a little moisture with spatchcocking, but I think that would be negligible in a smoker myself. Doing it whole and leaving it in longer might do the same 🤷‍♂️

More than one way to smoke a bird and I know whatever you do it’s gonna slap tits anyway.

Been doing it for years. Brine it with Rodelle’s or Bell’s turkey brine as per instructions on the tub it comes in. Inject it with a creole butter. You can use a store bought one, but it’s easy enough to make your own and better. Dust it with a dried cranberry poultry seasoning or Bell’s seasoning. Smoke it under pecan at 225-275f with an extra auxiliary pellet tube or pellet tray until the inner thigh gets to 165f. At 275f with an auxiliary pellet tube, you’ll get nice smoke flavor and it’ll take 5-7 hours for a bird of that size which is what I usually get.

Spatchcocking is also about getting the bird cooked faster, so a couple less hours means probably negligible moisture loss compared to that moisture lost over more time on the grill.

Only problem is a turkey is so big it would be hard to offset the coals after spatchcocking, that fucker is taking up a webber

Now I want to grill a whole bird.  Last whole animal I smoked was a 240lb hog on a pellet grill that was its own trailer, that was fun.  Only problem is it wasn't done in time thanks to a meddling friend that got high and turned the temp down when I was napping.  I came very close to beating the shit out of him for it, never EVER touch another person's cooking project without permission.  I had to do a lot of math to figure out exactly when to start smoking so that pig was ready exactly on time.  Instead we had a few hundred very hungry people standing around waiting.  It finished, but we had to bust out the kegs and let people get shitfaced while waiting till after dark for pig

Your friend should consider himself lucky you not only fed him but didn’t break his hand and send him home hungry and thirsty.

We don't talk anymore.  That guy has burned more bridges than anyone I know.

Pig was great though.  I had five gallons of a mustard/apple cider baste that I mopped on it with an actual mop

When I was done that thing was crispy on the outside and juicy on the inside.

:drooling:

i want to do a whole pig really bad but id need a much larger space than a 22" weber provides.

eventually ill upgrade to a real off set smoker. all in due time. or i could dig a hole in the ground:naughty: both are possibilities.
