My guess is this won't work. The point of the lemon juice is to pre-convert the psilocybin to psilocin. Psilocin doesn't stand up well to heat. Therefore you will have fewer actives.

Just picking a spot to reply to all the responses here.

Lemon tek will dry out to crystals fine if you run them in the dehydrator long enough. However, nearly all of the psilocin in lost in dehydration, so converting a significant portion of the psilocybin to psilocin before dehydrating it is going to reduce the total amount of actives.

If you are not dehydrating then adding the citric acid or lemon juice does pre-convert a lot of the psilocybin to psilocin which makes it more bio-available. That means it comes on faster and stronger and lasts shorter. Making tea without any acid also makes the psilocybin more bio-available but not by converting it. It is just in a soluble form that the stomach can convert quickly. So the effect is very similar to lemon tek. Faster and stronger come on and shorter duration. Both heat and acid do help break down the chitin to reduce stomach upset some.

So if you are drinking the tea or acid/lemon tek right away, either is fine. For reduction or dehydration, I recommend leaving the acid out. If you are making gummies, you can add the acid to the mix in later steps as a preservative. I wouldn't use acid at all for chocolate. But that is just a guess, I haven't worked much with active chocolates yet.

According to research I have seen, below a certain ph level the psilocybin to psilocin conversion is blocked my an enzymatic action. The study I saw showed that nearly 100% was converted in 10 to 15 minutes at the ph of orange juice where it was closer to 50% for lemon juice, which has a lower ph. The orange juice then began to lose total potency quickly after that time while while the lemon juice potency dropped much more slowly. That testing was done in a lab with HPLC which is above my pay grade, so all I can do is report what they said. At the time I saw this, I believe that the research was still unpublished, so I can't link or verify it.
