I've definitely used all sorts of knives. If you are needing to do volume, there's nothing like the $10-$20 chef knives from a restaurant supply. Bang them around, throw them in the dish washer, and you don't have to worry about having an expensive knife.

I've got a small set of Wusthof Grand Prix and a small set of Global. I like the Wusthof for the general purpose. Holds edge really nicely, really comfortably, fully forged and full tang. Not a big fan of the bolster though.

The Global is extremely sharp. I use it for more fine slice. It isn't as durable as the Wusthof, but sharper. No bolster, one piece, looks great, but a little uncomfortable to use for long durations.

Op if I may make a suggestion If you have a "Restaurant Depot" nearby call em up and use your ssi as your tax # just tell em your a caterer or something You can pick up a restaurant quality knife that is well within your budget. Not to mention having a Depot card can come in very very handy.
