Japanese style boning knives (honesuki)

I was looking at the hattori knives on jck and the japanese "boning knife" looks a bit different.



Much bigger blade then a boning knife you'd get from henckel or wustoff. can anyone tell me why that is?

Unlike a western style boning knife it has a stiff blade and a pointy end used to accurately remove all of the meat from the bones

its a japanese style cleaver, that extra steel gives you some extra leeway when it comes to grappling bones, and I assume being as it is japanese that the most bones it would encounter would be of fish and seafood, making for the knife needed, to be tactile and strong., So you get the added weight of a cleaver, yet the filet skills of a filet knife. I've seen sushi chef's use honesuki, they're beautiful knifes.

i've seen those, but they are too heavy for my needs

This As Seen on TV $20 [Samurai Shark tungsten carbide sharpener] has worked pretty well for me so far...
I've only used it a few times however, so I don't have a long track record to report. But it's inexpensive and easy to use.

once you find one stone, that you can work with easly I dont see the reason to get another one.

I have a rough (240 grit) stone, a medium one (1000 grit) stone, and one super fine (6000 grit) stone....I like my Knives/Arrow heads very sharp.. :samurai:

240 grit stone is good for aggressive sharpening of dull knives
1000 Grit stone is good for touching up knives that are in good condition and leaves a smooth, crisp edge.
6000 Grit stone is for polishing sharp knives to an edge that cuts like a razor.

i bought a lanski knife sharpening system which has the 5 different grits and the angle thing to give you a perfect 20 degree angle. i used that thing like one time.. i get way more use out of my $8 whetstone from the restaurant supply. for kitchen knives, i find they are more than adequite.

those honesuki knives are nice, a cook i used to work with had one that he used to remove the skin fish. i like a more flexible knife for that, but he never had any problems doing it.
