I believe my WBS jars may be stalling UPDATED: Includes picture

I'll get some pictures posted here in a little while when I can. 

It's been around 3 weeks since I inoculated my WBS pint jars.  They've been coming along quite nicely, but some of them seemed to get to a certain point and they've just slowed done a lot since then.  To give you an idea of what they look like, I have healthy, white mycelium growth all over the jars (all around the sides and the bottom) up until you get to the very top, where there is little to no mycelium growth across the top of the WBS.  I took one of my jars and tilted it, and very few grains moved, so I'm thinking there my be some mycelium right under the surface that's holding on to the remaining WBS?

If anyone can help me out, or give me some reassurance, that would be great!  Hopefully I just need to wait a little longer...

If they are stalled, is there something I can try on just one of my jars to see if anything happens?

use a marker mark the growth and monitor it

If it's just a few grains, you can just brush them away. Or shake them into the mix.

Good advice for everyone, thanks.  I think I'm just being impatient, but it seemed like the jars were just booming and then recently they've slowed so much.

Here's an example:

-  Some of my jars are a little more developed than this one, but you get the idea.  White mycelium everywhere but on top.

I'll use a marker and mark my jars; hopefully I'll see some noticeable growth in the next few days.

I'd imagine there's more than enough gas exchange going on.  My jar lid consist of four small holes with a layer of tyvek underneath.  Two of the holes were punctured by my syringe needle but were immediately covered with a layer of micropore tape.

If I were to guess, I'd say it's a mater of moisture content - being too dry.  Hopefully this will just mean slower colonization and not result in a complete halt of mycelium growth.

Put the tyvek on top of the lid, and seal with the ring.

Your jars look fine, shake the hell out of them, and they will be ready in a week.  After they look all white, wait for 4 or 5 days to let the mycelium consolidate.

I had the same problem with rye, after a while it started fermenting.  does it smell like it is? if so you have to ditch whatever isnt myceliated

I don't smell anything weird coming from the jars.

The temperatures are fine..  They stay around 76-78 most of the time; that's what our thermostat is set to.

Started looking more closelier at the jars earlier today and it looks like I was worrying over nothing.  On a couple of the jars I can see mycelium coming up to the surface.  I imagine that the jars that are slightly lagging behind have mycelium just below the surface of the grain.

I would have shaken the jars at around 5, 25, and 70%.  This would have made the jars colonize in a much more reasonable time, and would have prevented the bacterial contam that you appear to have from taking hold.  Three weeks is far too long for WBS... my quart jars average 2.5 weeks to reach 100% and that's considered a long time when dealing with WBS from what I've been told.

I'm willing to bet that if you shake that jar you posted a pic of, it won't recover...

P.S. The reason I bet It's bacterial contam is the fact that the line of mycellium is so well defined, and looks like a solid wall.  I've never had good come from a solid wall of mycellim like that.
