Jars and Hydration

Here's another question...My substrate jars are growing nicely...but some seem to be shrinking and drying out...I've read a lot about this, but I'm wondering...Is it better to leave them alone and wait until the jar stalls completely, or should I risk contams by hydrating the jars...If you think I should hydrate, what is the safest method???

honestly, what helped me out in that situation was to flip the jars upside down for a bit.. you might have to give them a quick tap to get the mycel to drop to the bottom (which would normally be the lid top).
