How hot it is in the steam pot ?

I bought plastic box that I want to sterilize. They resist up to 120? Celsius. Do you know how hot it is in the steam pot ? Is it more than 100?C, because of the pressure?

The temperature in a pressure cooker at 15 psi is 121?C.
The temperature in a covered pot is 100?C.

Actually it's a few degrees hotter... Steam is hotter than the water boiling below it.

Why do you insist in arguing a scientific fact Anno?
Water boils at 100 degrees C in an atmospheric pressure of 15 psi. In order for it to covert to vapor it MUST be hotter than the boiling point.

I am well informed. What you have explained only holds true for boiling water under absolutely no increased pressure over atmospheric pressure which is NOT the case in a covered pot. Only in the case of a vented kettle or uncovered pot.

Yes, I do.

The steam in a or over a closed or opened container has the same temperature as the water.
If the pressure is higher, both temperatures get higher and stay the same.

The pressure in a loosely covered pot is virtually the same as if there were no lid.

So, again, your claim

is bullshit.

as an official geek, i must agree with Anno. the geek link that Anno posted earlier explains it well. another way to think of it: if the water is 100 degrees C but the steam is 101C, where did the heat come from to make the steam hotter? an increase in air pressure causes and increase in the boiling point, so the temperature of the water and the steam will both be higher (and the same). but i don't want to argue so i will shut up.

First of all, who said anything about about the pot being "loosely covered"?
All sterilization by boiling tek's say to cover the pot as tightly as possible.

Secondly, I do agree that the rise in pressure resulting from the tight pot lid WOULD raise the temperature of the water equal to the temperature of the steam, however, the temperature would then be higher than 100 degrees C.

This makes us both right and both wrong at the same time.

Are we agreed now?

Fine. If you really believe that you can't raise the pressure in a well made pot by weighing down the lid, so be it.

As for my original stupid statement, I already conceded to your superiority.

I still say the answer to the posed question, under my proposed conditions, can be as high as 103 degrees C. (In a well made pot, such as RevereWare)

Tripmeister, the saturation temperature of water at atmospheric pressure is 100 degrees C. There is no way water or steam can get hotter than this. (Unless you take away the liquid water, which isn't going to happen in this case)

I'm so glad you find the truth so funny.

I own a set of ReverWare and know for a fact that I can STOP the escape of steam under a rapid boil for up to 5 seconds by pressing down firmly on the lid.

I could prove the resulting rise in temperature by drilling a hole in the lid and inserting/sealing a digital temperature probe. You're not worth ruining a pot for.

You're obviously challenging me to drill a hole in one of my pot lids to prove you wrong. Forget it. Like I said, you're not worth it. If you can't agree that a tightly sealed pot will act as a partial pressure cooker, then you're just stubborn. If you're not willing to admit that I may be even partially correct in this argument, than you're just closed minded. I can't understand why you do this shit. I admitted that you were correct about the water being the same temperature as the steam above and that I was wrong. Why can't you admit that it's possible to get a pot to partially pressurize by weighing down the cover therefore raising the temperature of the contents? Jeez, Anno, why be so silly? Jeez TM, why be so silly? We are such a pair of DORKS! LOL!! :grin:
