you were told correct.  there's bits of miswordings and misinformation in some of the teks that makes confusion:

- you can tighten the lid right from the get go.  the thought was with tight lids pressure would build in the jars and they would crack.  wrong.  there's 4 freekin holes in the top, it doesnt matter if its loose or tight. :smile: 
- if you wrap your foil tight over the jar (as you should) no steam "penetrates" from the outside, and none leaves.  you'll see the foil bubble up a bit due to the pressure inside, but its not much pressure and not a big deal.  when cooled the foil will suck back down and return to where it started.
- the moisture in your jar is really what turns to steam and does the sterilizing inside.
- and although you didnt ask just for clarity it doesnt make a damn difference if you use your lid upside down or right side up.  some say upside down or else the jar will "seal" - right side up, the rubber gasket does seal onto the jar, but its not a biggie.  when its time to open it your fingernail can loosen it with next to no effort at all.

If you're only using the boiling tek compared to using a pressure cooker I wouldn't wait 4 days. This gives contams the upper hand in the fight, after all the mycelium will exude their own antibiotics as they grow, so you want to inoculate once they're cool enough.

By the way - I wouldn't worry about adding water, I've even dried jars out by accidently pressure cooking for too long - and had to correct it afterward. The steam doesn't condense because it never really gets "added" to the jar - only the heat transfer. Imagine being in a steam room - you're thirst isn't quenched when you get out, you are more thirsty.
