Using a Large Pot w/ Lid rather then a Pressure Cooker.....

If you are unable to find or buy a pressure cooker, you can also sterilize the jars using a big pot with a lid.
In this case steam the jars for 1.5 hours in a pot lid on. Use only approximately 1 inch of water at the bottom.
You might have to add some water to the pot during steaming due to evaporation.


When using this method should I rest the jars at the bottom of the pot in the water? Or should I put something to seperate them from the water? Also do I steam at the lowest heat setting?

Sorry for all the questions, I want to do this right now and I can't find the information..

You need to keep them off of the bottom. You can use an old towel or shirt. Fill water to about 1/3 of the height of the jars. They can be in the water , Just not in direct contact with the bottom of the pot.You can simmer them for about 1 1/2 hours. Just as long as they aren't falling over and water isn't splashing everywhere.  :smile:

there are certain types of mold that you will see refered to as "the trych"  or similar names that you will have a great deal of difficulty killing by simple steaming.  that having been said, where you rest your jars doesn't really matter, with a few details.

one if you add water to allready hot jars it needs to be very hot or you will crack your jars.

two, if the jars don't have a special feature built into the bottoms, then pockets of steam build up under them, cause them to rattle, sometimes overheat and crack :mad:

canning kettles come with a wire basket designed to lift the jars out of the hot water.  this basket is sufficient.  pressure cookers come with an aluminum disk with holes in it for the same purpose, but if you had a pc you wouldn't be asking this now would you?  some people use a loose knit dish-rag.

i use a pressure cooker i feel there is no good substitute.  others will not agree, but they are not in the majority.

aight man,

The reason why you can use a big pot with a lid with the PF tek, is because the PF tek involves Brown Rice Flour as a spawn media. The nature of this spawn media is that its a flour....fine grainual substance that doesnt take but a millionth of a milimeter for heat to penetrate its core and sterilize it. With whole grains, the heat you get from your conventional stove top isnt enough to penetrate the often hard outer shell of the grain and thoroughly sterilize the insides of those grains. With these whole grains, you need a PC to get the Job done. Some argue that fractional sterilization is effective if done properly. Its very time consuming however.

Any cloth/towel will work at the bottum of your pan given you have water in it. As far as how much water you need: thats just common sense bro. It can be 1/2 way up the jars, or maybe 1/3. It just depends on how much area your jars are taking up which effects how high the water boils upward. You dont want the water spilling up over the jars, but at the same time, you dont want the water to evaporate.

Dont ever leave your home when your sterilizing your jars. I did this once after much experience, left with a friend to go run to the store to get some beer, came back home. The house had a thick dark colored smoke from my metal pan melting all over my stove top due to the water completely evaporating. The metal was even on fire. To say the least, I was very lucky.

but yeah, if you do it properly, you should never have a problem properly sterilizing brown rice flour via a pot and lid.

Place a tea towel or face cloth under the jars and then fill the wanter up to about 1/3-1/2 the height of the jars put the lid on and heat. If the water is boiling too ciolently, turn the heat down a touch, you dont want water getting in the jars.
