Thanks a lot. I know I may sound paranoid but I don't want to take a chance of all my jars molding and having all my hard work destroyed.

It's not a bad idea for newbies to play it safe, don't be in a hurry. Leave grain jars sit for a week and watch them. No growth of anything is a good indication you sterility technique was ok. It doesn't hurt a jar to sit, nothing changes inside it unles something starts munching on the grain.

Spraying the room and using gloves is overkill, IMO. Wash your hands well, sterilize the syringe needle before each jar, and don't leave the holes uncovered any longer than absolutely necessary.15 minutes might be a bit short, I run them for 30 minutes. Timing starts after the pressure cooker reaches full pressure. I normally run around a 2-5% infection rate (usually less than 1 in 20 jars), which I find acceptable. The two main sources of infection I've found are improper sterilization and contaminated spore solution.

I did a jar for an hour before and it made the substrated gummy. On mmgg is says to do it for 20 mins that was almost 20 mins, I don't think I should have a problem.
