Bulk Sub Contam? and a few quick questions

I had a few questions. I am using coir/coffee grounds as a bulk substrate for my brf cakes. I have two pans made, and the rest are ready to be crumbled and put in the pans with the bulk substrate. My questions are:

1)I put press and seal over the cakes/bulksub mixture and slit tiny lines for airflow. Should I continue to do this with the new ones.

2)Do I need the gypsum/hydrated lime in the bulk sub mix or just in the 50/50 casing mix, and should I sterilize the bulk substrate?

3)Is the correct gypsum in the pellet form? That is all I could find at my home depot.

Could you take a look and tell me how much longer this casing might take to be fully colonized. It also has that brown on some parts, but I think its just coir thats dried up. Has anyone ever seen this on their's before? I believe the blueing is just bruising because I had to crumble in the jars because I accidentally didn't get wide mouths for some of them. Here are a few pics.

1)yes.helps to maintain high c02.you could also put micropore tape over the slits as added security.
2)you don't need to add h/lime.gypsum can be added at upto 10%.
dont sterilze. pasteurize bulk substrate or casing materials.
3)you can find the right form of gypsom (calcium sulphate)in homebrew shops.
4)your trays look like they have lost a lot of moisture.
run some water into the trays,leave for a couple of hours to rehydrate before pouring off the excess.
