Useless water. Well, use less water, water if very useFUL. Never mind.

Didn't you read the instructions that came with the cooker?

Just enough to reach the rack is plenty of water in my cooker.

Thanks for the reply, myco. Actually, the instructions for my pressure cooker say to fill the pressure cooker 2/3 of the way up the food you're cooking. No instructions beyond that. ?

Hey GT....
Put a cloth on bottom of the pressure cooker..put in enough water to soak the cloth (about an 1-1/2 inch.Then put another cloth to contain the jars...(like a sack)...
This have 2 pourposes: controlling leaking into the jars and also controls contams...

GT, I dont even use a rack. I put the jars, and gill water half way up the jars, so only half is in the water, and I put one layer of aluminun foil. Mycofile was prolly right by saying you used too much water. And when you put the aluminum foil, make sure that its covering the lid and just alittle bit of the jar itslef, or when the water boil water can drip into the jars.

My pressure cooker only needs one cup of water so that it can seal, but I usually put two in case a lot of steam is lost before it seals.
I put the lids with the rubber side down.

I think you've got to much water, and before it seals it is boiling over the jars.

Thanks everyone! I'll use less water. So you can get away with using only 2 cups? Maybe I just don't understand the workings of a psi. cooker.

it's the steam in the cooker that steralizes the jars, not the water, and because the cooker is sealed, no steam or water can excape, so you don't need lots. The jars don't even need to be in the water at all.
i put my lids on tight but leave the holes uncovered. i then cover each jar with tinfoil folded down around the jars. this allows the jars to pressurize but no water can enter.

Man, thanks to everybody, but special thanks to joncrow!... that little bit of info was all I needed to figure out what I was doing wrong! The instructions that came with my cooker sucked ass. I am so relieved! Now I understand how that damn thing works.
