Boum, you don't need to worry about the humidity while your cakes are in their jars.

As far as the second question, I'm curious as to any opinions on this myself. Anyone???

well, you can "mix" in the same try, you just can't let the two different strains get in contact with each other. Put a piece of aluminum foil between each strain's section to avoid mycelium wars.
