I need a red snapper recipe! ASAP!

thinking of having red snapper since i just picked up a 1lb fillet and want a dinner for me and my girl, any suggestions?

i was thinking something that goes good with white or brown rice.

6 (6- to 8-oz) red snapper fillets (1/2 inch thick) with skin
6 tablespoons extra-virgin olive oil
1 teaspoon salt
3/4 teaspoon black pepper
1/2 cup finely chopped fresh cilantro
1 1/2 tablespoons minced garlic
1 1/2 tablespoons finely grated fresh lime zest

Accompaniment: lime wedges

Preheat broiler and lightly oil a shallow baking pan (1 inch deep).

Pat fish dry, then arrange, skin sides up, in 1 layer in baking pan. Brush both sides of fish with 3 tablespoons oil total and sprinkle with salt and pepper. Toss together cilantro, garlic, and zest in a small bowl.

Broil fish 6 inches from heat, without turning over, until just cooked through, 8 to 10 minutes. Transfer fish, skin sides up, with a metal spatula to a platter, then sprinkle with cilantro mixture and drizzle with remaining 3 tablespoons oil.

Well my suggestion wouldn't work because you bought filets, but I'll say it anyways. If it was a whole one, bake it, salt crust.

ok i boiled 1cup rice rice, threw in a handful of fresh (4) basil tops, and some ground pepper, and let that cook.

i mixed some salt, flower, and pepper, a ton of dried oregano, and powdered up the two fish fillets in that, and fried in olive oil. we steamed some broccoli florets and had at it.

all i can say is the basil made the rice very smooth, and it went well with the fish. the fish was good and the coating came out golden brown and "breaded looking"
great meal

i saw the recipe u posted on a random google search spicy, though i didnt have lime or lemon. still, tonights dinner was good.

thanks for that spicy, and daussaulit.

next time ill bake the fish, maybe bake it with lemon and tomato slices over the top, and chilis and garlic in the juice

I dont know if I am too late or not, but next time make some rissoto with slices of mushrooms to go with the fish as a side dish. Very very good side if you ask me.

i learned about this last year some time....guess its quite popular in france?

great way to cook fish though :smile: gotta have real salt though...like sea salt of some koscher salt..... like the pink salt

mmmm...now i really want some baked fish

the best fish to bake is baracuda, they are a mean fight and a mean fuckin meal

smother em in butter and minced garlic, a little basil, your set.

Wild mushroom encrusted Snapper w/sauce and beans

2 snapper fillets
1/4 C dried wild mushrooms
1 tsp olive oil


2c White beans
1C stock
2oz Bacon or pancetta


1 Zuccini
4oz sun dried tomatoes
1 red onion
2oz balsamic vinegar
2oz butter


Method
1. place bacon small diced in a seute pan and cook until bearly brown
2. add beans and saute for 1 min
3. deglaze pan w/ stock
4. simmer until stock is almost gone
5. pure then place in the center of the plate

1.chop mushrooms into a course powder
2. coat snapper in mushrooms
3. saute on high heat in olive oil until golden brown
4. place directly on top of the beans

1.dice olions, tomatoes, and zuccini
2. Melt butter
3. mix in balsamic vinegar
4. add vege mixture on top of the snapper in the center of the filet


Hope this works out for you. I won an award for this dish it is simple and only takes about 45 min to make. tasty and sure to impress the girl.
