recipes for the smoker?

does anybody have good recipes for smoked pork, beef, and fish (trout & catfish in particular)?

i don't know much about smoking fish or meat, but last year i saw a fish smoker and what determines the flavour is not the spices you put on the fish but the wood that you use...

the types of wood that were used on the smoked flounder i was fortunate to try were:

birch
and some other...wood dunno what it's called in english

It's not only the wood, but also the marinade one uses. A good apple, cherry wood & a good marinade do wonders..........

Here is the ghetto smokah' tech:

A) You only need regular charcoal, nothing fancy house brand is fine.

B) a regular gas grill works fine

C) 50/50 soy sauce to water is your marinade

Place a chicken, pork roast or roast beef in a bakeing dish that will fit on the top rack of your grill, pour your soy/water marinade in the pan, as deep as possible. Start a small charcoal fire in one end of the grill on the rack you nornally cook burgers on, place the roasting pan on the top rack at the other end of the grill, keep a low heat smoky fire going , i usually only have to add charcoal once or twice, smoke like this for 3 to 5 hours depending on the size of the roast, rotata with tongs to get the roast marinaded while cooking. If you need to, you can flash the roast in a 400 dg. oven for 30 mins to finish it if you need to, but the slow cook is the smokey way to go if you have the time.

Blazing Smoked Trout

1 medium trout
1 clove garlic, quartered
1 lemon, sliced thin(peel on)
1 habanero pepper, quartered
1 jalapeno pepper, sliced into rings
pepper

Wash trout and remove bones. Add all other ingredients to inside of trout. Smoke for ~3hrs. Remove stuffing. Eat.
I like to leave some of the jalapeno inside.


I don't have the recipe on hand right now, but you should most certainly try a brined/smoked trout.

mesquite and hickory wood chips are my favorite to use
if you're smoking ribs then boil them for about 20 minutes before you start smoking.. it makes the meat tender and just fall right off the bone easily
a good marinade = key
good woodchips = key

for fish you can't go wrong with some pepper and lemon.. maybe some dill or paprika. Don't need anything too fancy.
