?PF-TEK Flipping the lid of jar before cook in PC.

I made a big mistake and completely passed the step in PF-Tek that recommends that the jar lids be flipped before cooked in the pres cooker. This means the rubber part should be faced upward so the rim when cooked can release more air and receive a balance of oxygen. ***This maybe the reason why I fucked up sooo many jars. I have yet to get passed the full colonization step yet!

I am going to try this and flip the lid like this tek says I should. But I wanted to know if I keep the lids flipped or if I flip them back after they are cooked (while its still hot) .

Cause if I open the lid when its cooled its gonna have a chance for air contam.

Any suggestions?

Off course you leave them flipped.

Your problems are resultng from other things thogh, IMO.

Like incorrect water content or too little sterilisation time.

my friend could be doing it wrong as well, but he takes the lid and sets it, rubber side down, on top of the band and tapes it downthat way. then he cooks the jars with the lids loose. he is finishing up with his first cycle and it seems to have worked fine for him.

it will work fine with the lids down, the old school way is lids flipped, allows better air exchange as long as you dont have the lid ratcheted down, but from a friends experience rubber side down will work fine, maybe a few days slower

I found out the problem was incorrect moisture level. Thank Anno for your input.

Note to self: ABIDE BY THE DAMN INSTRUCTIONS!
