Question About Steaming the PF Tek jars
    #587216 - 03/23/02 10:12 AM (22 years, 10 months ago)

Okay, when you are steaming the jars from the PF Tek guide, it gets sort of confusing. It suggests a 3 piece vegetable steamer, but it says anything is good as long as the jars don't touch the bottom of the pan. I'm wondering if the lids of the jars have to be above the water level of the pan. Anyone know? Thanks.

Uh, are you serious? Ok, if you are, YES!!!! Keep the water level below the lids of your jars. You don't want water getting into them.

Yeah, you're definitely going to want the water level below the jars, otherwise water will easily get into your jars. That's part of why you have to cook it for so long, to make sure the jars are evenly and thoroughly heated.

As for the type of cooker, as long as you cook it for long enough at boiling point, it doesn't really matter what you use. I've never used a three piece cooker myself, but a quick search online makes it seem like it cooks at atmospheric pressure, which means you'll probably want to cook for around 90 minutes to ensure full sterilization.

Edit: love your profile pic, btw.
