Any piece of cloth will do.

Add about 2 cm of water and let the jars stem in a covered pot.
Add some water from time to time to keep the level.

it seems im about a week ahead of you, i just my first 8 jars ever lastweek and here is what i did:
after scrubbing everything like i was anal about germs, i made my jars and covered the tops with foil (i followed PF tek word for word) i used a t-shirt in the bottom of the pot and adjusted the water so it was boiling but not goin nuts on high or anything, after the temp of the jars and water reached boiling you probablly could turn down the stove a good ammount (i have a gas stove and it wored great). the reason i responded to your post was because i was having a problem with the t-shirt catching air from the water and sticking up out of the water. it really was not a big deal but the thing you should watch for is this cause it could make the jars tip over if they dont fit well in the pot. my pot held 4 jars pretty well. i covered the pot when i got the water at the right temp and let boil for an hour or a little longer, then just let them cool like the PF tek said. everything seems to be good so far, i have growth in all but one jar. i just wanted to let you kno that im a newbie just like you and you should take that into concideration when reading what i wrote. i just thought that the t-shirt catching air and filling up like a baloon above the water was something you could watch out for, or just use a washcloth which probablly wouldnt have that problem. good luck.

A metal vegetable steamer basket works great to keep the jars off the bottom.
