need some oyster production figures

hey just floating an idea by some business partners bout gormet mush cult and i need some production estimates and pricing. The plan for oysters is to use 6-8" diameter polypropelyne tubes at a yet undetermined height. I was curious what yeilds people were getting using the hanging bag/tube method for oysters. please include the diameter and height of the tube/bag. Also anyone know what ideal diameter and heights are? And whats your local market price for oysters? thanks a bunch.

from my googling ive come across some data which allowed me to derive these numbers.
using the hanging bag tek ~8" diameter x 5 ft you can yeild ~ 4 lbs oysters per month. this equates to 2 lbs per sq ft per month. market prices between 2.50 and 7$
that sound bout right?

cant really be of too much help other than the prices here are 6.99 can a pound retail, fresh.

be interesting what your final numbers are.

i find that figure very hard to believe. Assuming a lowly 50% BE you would only need an 8lb "log" to get produce 4lbs. I'm not certain what a "log" of those dimensions would weigh but I would bet it to be more than 8 pounds! Maybe your referring to dried pounds? :crazy:

I don't have very much experience cultivating oyster ATM. I plan to do spawn bag blocks this year to complement my shiitake sales. Perhaps I'll be a better source of information then... :smirk:

whoah, here's your formula:

SA = 2(pi*r^2) + (2*pi*r)h

My rough, in the head calculation says that "log" has ~11sqft surface area, which is just better than .33lb/sqft. pretty pathetic yield IMO.

Decided on 6ft tall x 8" diameter 4mm poly bags.

as for your estimates of needing only 8lbs of substrate to produce 4 lbs fresh mushrooms. that would be 8 lbs of dry substrate => 32 lbs of wet. Yeah i realize my estimates were pretty off so heres what i have corrected.
BE = (fresh mushroom weight) / (dry substrate weight) right?
so in reality my bags @ 200lbs wet should be doing 33 lbs total @ 50%.

200lbs of wet substrate = ~66.6 lbs dry substrate @ 66% water weight
BE @ 50% = 33.3 lbs over lifetime (assuming 60+ days)
lbs per month per bag = ~16 lbs
16lbs/bag/month * $4 /lb = $64 month/bag
cost of matierials for 1 bag= $13
monthly profit for single bag = $51

A 7 foot log ways more like 80 pounds at least, and the wet weight of a flush could run 10 pounds maybe.

Last summer I made logs using 8" diameter lay flat ducting. They were roughly five and 1/2 to six feet tall. I could hang them by myself but they felt pretty heavy and awkward. Not that I am a very strong guy, so I would estimate their weight between 35-40 lbs. I can't give you a yield estimate, never figured that out.

I get approx. 8-10kg per column.
30cm flat diameter, 1.8-2m long.

for us imperialists that's roughly 20lbs from roughly 14sqft surface area. (assuming my metric conversion isn't way off)

He said that he only flushes the columns once, so he gets 8-10kg fresh on the first flush.


You will not see many people speak about dried edible mushrooms unless they are in the context of wild mushrooms or shiitake. Most cultivated mushrooms are sold fresh at market, those mushrooms that are not pretty enough to sell fresh are usually the only ones dried.

yeah i was just making sure he wasnt saying his columns were only like 10 kg.  that woulda killed my estimates. so 10kg per column per flush is pretty freakin decent.  As far my our business plan's progress, i would say its coming along nicely even with the low ball estimates of production.  should be able to repay our initial loan of ~$20k in about 8 months and then consistantly make ~$6k a month profit.  this is from using about 800 or so sq ft divided between 3 strains.  Next month is going to be very busy for me because we will probably aquire the warehouse space May 1st. lots of building to do.  I might have to kidnap Tak for a while  :grin:

I realllllly needa know how many lbs of wet or dry substrate fit into the bag.

I use 20kg bags of dry oaten chaff to produce 3 columns.
4 kg os spawn per 20kg bag of dry chaff.
Pasteurised i have no idea on weight.

I produce 10kg wet weight and only well my mush wet.
Nothing gets dried because I always harvest at optimum quality.
I choose quality over quantity.
I am currently using an industry tested strain called hk132 If I`m not mistaken.
It has a higher yielding relative but always produces superior mushrooms.
So I choose slighlty decreased yield for better mush.
If yield is your concern you can yield close to 15kg per colimn with the correct strain.

Also remember to harvest at the correct maturity level.
I find I used to use Stamets' books as reference but found myself not like the mush or it`s appearence.
I harvest a bit younger and rather produce nice big boquets over the individual large ruffled oysters that I find people don`t even like.
More delicate boquets are what I sell.
Never dried and I never sell 2nd grade.
Because I find if I take care it only needs to be 1st grade.

It`s something you should consider, quality or quantity.

I find the market is there to be able to make the choice.
Having shown my quality levels I find the buyers are now asking me to produce other exotics. This means by just maintaining a level I opened up new markets.

In "The Mushroom Cultivator" by Paul Stamets and J.S. Chilton, they say that the average Pleurotus Ostreatus commercial yields are 1 kilogram fresh weight of mushrooms per kilogram of dry weight of straw substrate. Page 192. That is pretty consistent with several other commercial growers that I know.
