differences between standard oyster and blue oyster

Im trying to find out the differences between Pleurotus Ostreatus (standard oyster) and Pleurotus columbinus (blue oyster). From what I have found they seem almost exactly the same except one is blue and one is white. Are there any other differences such as taste, growing requirements, yields, and so on? Thanks!

P. Columbinus is a subspecies \ synonyms for P. ostreatus
The primordia forms is higher temperature then (P. ostreatus as low as 50 deg F)
P. Ostreatus needs cold shock; don?t know if blue need it .

While we're also on this topic, if I may add to the thread, what is the general consensus of taste differences between all the types of oysters? From ostreatus, pulmonarius, columbinus, djamor, eryngii, citrinopileatus, etc.. ? I've heard the king oyster (eryngii) has the best taste but that may just be preference.

I'm just wondering since I have most of the above cultures and am wondering which to grow out first. I've never eaten any oysters for that matter.

Blue oysters grow well on sawdust havnt had much success with them on straw do to the fact that I dont pasturize the straw. Pink oysters are the only mushroom I use straw for and find that they grow so fast that there is no need for pasturization.

Kings taste almost slightly remanisent of almonds. They are much firmer and less abundant compared to other species, they do very well with bottle production cuz less space means they can concentrate on fewer larger specemins.

Pink oysters are very frail mushrooms that produce like mad, but shelf life is only 3 days before they start to turn white.

Pulmonarius is a punjent very mushroomy smelling robust mushroom.

I consider ostreatus to be an awsome mushroom sometimes grey some times blue but produce well and do well in most conditions I grow em in the spring and fall. I dont belive they need cold shock never have before they also grow in the summer but I switch to pinks cuz they only do well in the heat.

Or what do you find they perfer-sawdust say VS straw..
