how long can i wait on sterilized jars?

Hey all! OK...I just put in my jars to sterilize, buts it's way past my bed time and I need to sleep. I'm going to turn them off in 15 min (2 pots one pressure cooker) and I wanted to know if they will be ok to juice up in the morning or the afternoon. If I wait about 18 hours to innoculate, do I have to re-sterilize the jars? And does double sterilization make for funny shrooms? Thanks all!!!!!

if you give them a good sterlization then it is done and you can wait days before innocuation. this can be good because it gives any bacteria a chance to grow and if none does then it is clean and you don't waste any spores.

Or if you don't want to waste your time, go ahead and innoculate as soon as the jars are cooled. It only takes a few hours.

It usually only takes 4 hours or so for the jars to cool. However, you're fine waiting until the morning to inoculate. That's how I always do it.
