leaving jars for several months?

My dog is going to be away for about 10 weeks this summer and he doesn't want to have to wait an extra month for jars to colonize when he gets back. Would it be possible for him to innoculate jars and then not touch them for the 10 weeks? Is there a substarte that is slower to colonize that might be better for this situation? would changing the moisture content slow colonization? Would packing the substrate tighter help?

Don`t mess with the water content. The fridge will keep them stalled safely, as long as they are in an air tight container.

puscle hit it on the head--don't change anything--just throw them in the fridge when they are well colonized.
