Looking to start a farmers market mushroom stand, anyone have any experience?

Like the title says, I'm looking to start a mushroom stand at my local farmers markets. If anyone has done this, or currently done this, what are some things you wish you would've known? What issues have you ran into? Do I need any special licensing to sell dried/powdered mushrooms? If I don't make any health claims could it be sold as just a food ingredient? Sorry if this isn't the right type of post for this section. I'm newwwww :icecreamsadness:(joe dirt voice)

Contact your local farmers market and ask them what you need. Nobody is going to hold your hand and help you start a business.

For starters I'd source some good genetics and learn how to breed if you're serious about it. Store your master cultures on slants and plan what you want to sell each season. Start small and invest more when you really know what you're doing

I never asked someone to hold my hand so I’m not sure what you mean by that. I’m asking specifically about farmers market stands and people’s experiences. There’s a weird line with powdered products and I’d like to know if people have had issues trying to sell them.

Around here they recently changed it so anyone can sell fresh, but any kind of processing such as dehydrating and grinding needs to take place in a certified food kitchen. :facepalm:

I do have advice for you! I'll assume you're doing your own research for your local bylaws and certificates, if you need them; where I am, I only needed liability insurance, and that was it.

Make sure to grow a decent variety! I do four types: Pearl oyster, Blue oyster, Pink oyster, and Lion's Mane. The pinks, I admit, I grow for curb appeal. People will see that bright color, and immediately come over and ask questions.

Arranging your product thoughtfully will attract more customers, too! I arrange them like flowers, and get compliments from fence-sitters and customers alike. Thoughtfully arranging your product shows you care. I keep my mushrooms in open plastic clamshell food containers, but that's just for display. The product goes into a food tray which goes into a handle bag. The clamshells are durable, washable, and endlessly reusable. For transport, I bring them in cardboard boxes, that really does give them the best long term storage in a dedicated fridge or walk-in cooler.

As for pricing, I keep it simple and offer a variety pack that includes 4oz of each, which is a pound of mixed mushrooms for $20, and single variety quarts for $6 a piece, and discounts for multiple purchases.

My best advice, though? Unless you have a medical reason, don't sit down and look at your phone. Stand at attention, watch the shoppers, anyone who makes eye contact and approaches, just give 'em a wave and a hello. Let them know you're paying attention, customers value those qualities in a vendor.

Lastly, please consider *not* cultivating the Golden Oyster (Pleurotus citrinopileatus), as it has a nasty tendency to get loose, and is already listed as an invasive species in the midwest, great lakes region, and the northeast. I believe that considering the local biosphere is critical in deciding what to grow. I'm a steward of the earth, and I try to treat her as well as I can.

I don't think this is 'holding your hand', for what it's worth; hell, I think it's awesome more people want to do this, and I say, power to you, and I hope some of it helps! Good luck!

Good tips. The golden oyster being an invasive is really true.

If you get into tinctures, a nice label really helps.

Some young mushrooms still growing on the block also make a good impression. People are curious about how mushroom farms work.

I bring 5-6 uninoculated substrate blocks to the farmers market as well as leftover spawn from the week. I'll inoculate a "kit" right in front of the buyer with whatever species they want. I sell them for $10 which is a bargain and it's really fun and accessible for lots of people.

Are you at the point where you can produce lbs worth reliably? After several years of tweaking recipes, I probably could with some varieties that I have, like HK-35 and Poho which colonize fast, and Gray Dove, Branched, and a couple others.

Timing might be an issue, having them ready to harvest in their prime near the days the market is open might be tricky. In this area, there's always one running not too far away on different days of the week at different locations, during the season.

Do you process the same every week, keep temps consistent and you'll get consistent weekly yield. I harvest about 80lbs weekly and some go to restaurants the rest go to one farmers market.
